Surprisingly simply, right? Making dumpling wrappers from scratch is considered the norm in China. If you&rsquo;ve never tried homemade wrappers, follow my guide and give it a go. For more in-depth explanation and other varieties, please read my <a href=\"https:\/\/redhousespice.com\/homemade-dumpling-wrappers\/\">Wrapper Guide<\/a>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Flour type<\/h3>\n\n\n\n<p><strong>All-purpose (plain flour) works very well<\/strong> for dumpling wrappers. It&rsquo;s possible to use high gluten bread flour, but you might find the cooked wrappers a little too chewy.&nbsp;<\/p>\n\n\n\n<p>Special dumpling flour available in Chinese\/Asian shops produces a smoother texture and whiter appearance as it&rsquo;s heavily processed and bleached.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Flour-water ratio<\/h3>\n\n\n\n<p>Chinese dumping dough needs to be soft enough to be easily rolled out into thin discs but not so soft that it sticks. If <a href=\"https:\/\/www.loveandlemons.com\/how-to-measure-flour\/\" target=\"_blank\" rel=\"noreferrer noopener\">using a cup to measure<\/a>, 2 cups of all-purpose flour requires &frac12; cup+2 tsp of water. It&rsquo;s important that you sift the flour before adding it to the cup, then level it properly.<\/p>\n\n\n\n<p>Please also be aware that the water absorption capacity of flour of different brands may vary. The humidity in the room also affects the ratio slightly. So minor adjustment might be necessary.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Knead &amp; rest<\/h3>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"1378\" height=\"924\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/12\/dough.jpg\" alt=\"A piece of dough\" class=\"wp-image-12827\" srcset=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/12\/dough.jpg 1378w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/12\/dough-400x268.jpg 400w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/12\/dough-300x201.jpg 300w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/12\/dough-1024x687.jpg 1024w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/12\/dough-768x515.jpg 768w\" sizes=\"(max-width: 1378px) 100vw, 1378px\" \/><\/figure>\n\n\n\n<p>You can make dumpling dough either by hand or in a stand mixer with a dough hook.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>By hand:&nbsp;<\/strong>Combine flour and water to form a rough-looking dough. Rest for 10 min then knead it into a smooth, medium-firm dough. Then leave to rest for a further 30-60 minutes until it becomes soft.&nbsp;<\/li>\n\n\n\n<li><strong>With a stand mixer<\/strong>: Mix and knead the dough on low speed for about 8 minutes until a smooth dough forms. Leave to rest for 30-60 minutes until soft.<\/li>\n<\/ul>\n\n\n\n<p>To confirm the readiness of the dough, Chinese cooks would say, &ldquo;it should be as soft as an earlobe.&rdquo;<\/p>\n\n\n\n<p>For novice dumpling makers, I think it&rsquo;s better to make the dough by hand for the first time. Cut out wrappers with the rim of a wine glass or a biscuit\/scone cutter. In this case, slightly reduce the water to make a firmer dough and reduce the resting time by half. <\/p>\n\n\n\n<p>Always remember to cover the unused dough to avoid drying out. Here is a summary of what a good filling should be like:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>A nice balance of the ingredients<\/strong><\/h3>\n\n\n\n<p>This means a good mix of protein and vegetables. Together with the carbohydrate from the wrappers, dumplings create a nutritiously balanced all-in-one meal. <\/p>\n\n\n\n<p>The protein can be any type of meat (pork, beef, lamb, chicken, turkey, fish, seafood), eggs and soy-based ingredients like tofu.&nbsp;<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<figure class=\"wp-block-image size-full\"><a href=\"https:\/\/redhousespice.com\/dumpling-fillings\/\"><img decoding=\"async\" width=\"924\" height=\"1385\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/01\/dumpling-filling-by-redhousespice.com-8.jpg\" alt=\"Ingredients for making dumpling fillings\" class=\"wp-image-4878\" srcset=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/01\/dumpling-filling-by-redhousespice.com-8.jpg 924w, https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/01\/dumpling-filling-by-redhousespice.com-8-400x600.jpg 400w, https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/01\/dumpling-filling-by-redhousespice.com-8-200x300.jpg 200w, https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/01\/dumpling-filling-by-redhousespice.com-8-768x1151.jpg 768w, https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/01\/dumpling-filling-by-redhousespice.com-8-683x1024.jpg 683w\" sizes=\"(max-width: 924px) 100vw, 924px\" \/><\/a><\/figure>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\"><strong>A great combination of flavours<\/strong><\/h3>\n\n\n\n<p>Apart from the natural flavours of the main ingredients, condiments and aromatics are added to the filling. <\/p>\n\n\n\n<p>The common seasonings include <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">soy sauce<\/a>, oyster sauce, <a href=\"https:\/\/redhousespice.com\/sichuan-pepper-guide\/\">ground Sichuan pepper<\/a>, Chinese <a href=\"https:\/\/redhousespice.com\/five-spice-powder\/\">five-spice powder<\/a>, white pepper, sesame oil, salt, sugar, etc. Finely chopped scallions and minced ginger also add great flavour.&nbsp;<\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<figure class=\"wp-block-image size-full\"><a href=\"https:\/\/redhousespice.com\/vegan-dumplings\/\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/12\/vegan-dumplings-1-scaled.jpg\" alt=\"A half eaten dumpling filled with tofu &amp; vegetables.\" class=\"wp-image-6957\"><\/a><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>A moist texture but not overly wet<\/strong><\/h3>\n\n\n\n<p>For meat-based fillings, you can achieve the goal by using meat with high-fat content, adding a little oil or incorporating water\/stock into the meat. <\/p>\n\n\n\n<p>For <a href=\"https:\/\/redhousespice.com\/pan-fried-vegetarian-dumplings\/\">vegetarian dumplings<\/a> or <a href=\"https:\/\/redhousespice.com\/vegan-dumplings\/\">vegan dumplings<\/a>, the problem often goes the other way. You can apply these method to fix a &ldquo;wet&rdquo; filling: <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Squeeze out excess water after chopping the vegetables; <\/li>\n\n\n\n<li>Add an ingredient that&rsquo;s good at absorbing moisture, such as mung bean vermicelli, scrambled eggs, etc.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"pleating\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Pleating<\/mark><\/h2>\n\n\n\n<p>Do you find folding Chinese dumplings intimidating? As shown in the image above and the video in the recipe card below, it&rsquo;s quite simple to accomplish.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Place a spoonful of filling in the middle of a wrapper.<\/li>\n\n\n\n<li>Fold the wrapper and pinch the top of the rim to seal.<\/li>\n\n\n\n<li>Make 2-4 pleats from each end. While rolling out the wrappers, you might need to dust the dough with flour to avoid sticking. However, if you sprinkle excess flour, you would find it difficult to seal.<\/li>\n\n\n\n<li>Choose the pattern that suits a particular cooking method. If pan-frying or steaming, the shape of the dumplings will remain more or less the same after cooking so you may wish to try out some fancy patterns. Read on to find out how each method is executed.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"boiling\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Boiling<\/mark><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2023\/03\/boiling-dumplings-scaled.jpg\" alt=\"boiling dumplings in a pot.\" class=\"wp-image-25517\"><\/figure>\n\n\n\n<p>Although not very popular in restaurants in the West, boiled dumplings are in fact the most popular form in Chinese households. It&rsquo;s my favourite since childhood as I love the soft yet slightly chewy texture and its non-greasy taste.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Use a large pot with plenty of water. To decide how many to cook at once, here is my trick: if the dumplings are placed in a single layer, they shouldn&rsquo;t be much bigger than the surface of the water.<\/li>\n\n\n\n<li>Don&rsquo;t slide in dumplings until the water is fully boiling. Remain high heat.<\/li>\n\n\n\n<li>How to know they&rsquo;re cooked? Use the traditional Dian Shui (&#28857;&#27700;) method: Once the water comes back to a full boil, add a little cold water to calm it down. Repeat the procedure another two times (Remember to cover the pot with a lid each time after you add water). Then your dumplings will be fully cooked!<\/li>\n\n\n\n<li>Drain and rinse the dumplings under cold water briefly. This is to remove excess starch and minimize the possibility of sticking (skip this procedure if you are going to serve the <a href=\"https:\/\/redhousespice.com\/beef-dumplings-soup\/\">dumplings in a soup<\/a> dish.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"pan-frying\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Pan-frying<\/mark><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2024\/12\/dumpling-with-golden-bottom-scaled.jpg\" alt=\"dumpling lifted by hand showing its golden bottom.\" class=\"wp-image-38511\"><\/figure>\n\n\n\n<p>Pan-fried dumplings stand out for their golden, crispy base. It&rsquo;s very simple to cook following the &ldquo;fry-steam-fry&rdquo; procedure.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Firstly, heat a little oil over high heat then add the dumplings. Gently move the pan back and forth to ensure each dumpling is in touch with the oil.<\/li>\n\n\n\n<li>Once the base of the dumplings becomes golden, pour in cold water (enough to cover &#8531; of the dumplings). Quickly cover with a lid. Leave to steam over high heat.<\/li>\n\n\n\n<li>When the water evaporates completely, cook for another 30-60 seconds to crisp up (be careful not to burn though).<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"steaming\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Steaming<\/mark><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/09\/Steamed-Dumplings-12-scaled.jpg\" alt=\"Uncooked dumplings in bamboo steamers\" class=\"wp-image-11562\"><\/figure>\n\n\n\n<p>Steaming is the easiest of all three methods as it requires minimum attention and effort. In Cantonese style dim sum restaurants, <a href=\"https:\/\/redhousespice.com\/steamed-dumplings-two-ways\/\">steamed dumplings<\/a> are one the most popular dishes. Here are a few tips for this method.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>To prevent the dumplings from sticking to steamer baskets, I like laying a piece of thinly sliced carrot under each dumpling. You may also use parchment paper or brush a thin layer of oil if using metal\/plastic steamers.<\/li>\n\n\n\n<li>Bring water to a full boil in a pot\/wok, then place in the steamer baskets. I highly recommend you give it a try!).&nbsp;<\/p>\n\n\n\n<p>It&rsquo;s not at all compulsory to have a sauce at the side. I sometimes like eating dumplings plain to fully enjoy the flavour of the filling. You might like this way too.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"storage\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Storage<\/mark><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Freeze uncooked dumplings<\/h3>\n\n\n\n<p>Chinese dumplings are my favourite food to keep in the freezer. They&rsquo;re so handy to have so I really encourage you to make a big batch if time permits. Here is how you freeze them properly:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Lay uncooked dumplings on a tray (dusted with flour or lined with parchment paper) in a single layer. Make sure they&rsquo;re not touching each other.<\/li>\n\n\n\n<li>Keep in the freezer until they&rsquo;re fully frozen. Then transfer them into airtight plastic bags. Consume within three months.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Cook frozen<\/mark> dumplings<\/h3>\n\n\n\n<p>No matter how you wish to cook them, <strong>frozen dumplings don&rsquo;t need to be defrosted<\/strong> beforehand. If boiling or pan-frying, follow the same instructions explained above. If steaming, prolong the cooking time by a couple of minutes.<\/p>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"faqs\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">FAQs<\/mark><\/h2>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1614010691486\"><strong class=\"schema-faq-question\">Q: My dough is too sticky\/too firm. Any way to fix it?<\/strong> <p class=\"schema-faq-answer\">A: If the dough appears sticky, add a little more flour and knead it in until well combined. If the dough is too firm, knead it with wet hands to gradually increase its hydration. Or, just leave it to rest longer.
