With protein, starch and vegetables all in one bowl, it makes a complete meal with only 450 calories per serving.<\/p>\n\n\n\n<p>There are many varieties of wonton soup in different regions of China. They differ in wrapper types, filling ingredients and broth seasonings. The Cantonese style also has a version including noodles.<\/p>\n\n\n\n<p>By the ways, wontons can also be served without broth. For example, <a href=\"https:\/\/redhousespice.com\/sichuan-spicy-wonton-in-chili-oil\/\">Sichuan Chili Oil Wontons<\/a> are boiled, drained then coated with a sauce, whereas <a href=\"https:\/\/redhousespice.com\/fried-wontons\/\">Fried Wontons<\/a> are enjoyed alone, or with a dipping sauce.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-soup-scaled.jpg\" alt=\"cooked wontons in soup with blanched Bok Choy.\" class=\"wp-image-22894\"><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"why-this-recipe\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Why this recipe<\/mark><\/h2>\n\n\n\n<p>The wonton soup recipe I&rsquo;m sharing today is <strong>a quick and easy one<\/strong>. No matter if you are a novice home cook or a busy parent, my detailed explanation and tips will help you to make it without stress (highly likely you&rsquo;ll cook it again and again).&nbsp;<\/p>\n\n\n\n<p>Before I talk about the ingredients and cooking steps, here are my <strong>top tips<\/strong> to keep in mind.<\/p>\n\n\n\n<ul style=\"background-color:#ecf4f2\" class=\"wp-block-list has-background\">\n<li>Use ready-made wrappers to save time<\/li>\n\n\n\n<li>Make a juicy filling by incorporating broth into the meat<\/li>\n\n\n\n<li>Use shop-bought broth if you&rsquo;re in a rush but making your own is easy<\/li>\n\n\n\n<li>Assemble a big batch of wontons and freeze them for future use<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"ingredients\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Ingredients<\/mark><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/ingredients-for-wonton-soup-scaled.jpg\" alt=\"Ingredients for wonton soup including stock, bok choy, pork, scallions, wrappers and seasonings.\" class=\"wp-image-22886\"><\/figure>\n\n\n\n<p>This recipe calls for three groups of ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Wonton wrappers<\/strong> (aka wonton skin, wonton pastry)<\/li>\n\n\n\n<li><strong>For the filling<\/strong>: ground pork, scallions (aka green onion\/spring onion), ginger, <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">soy sauce<\/a>, <a href=\"https:\/\/redhousespice.com\/shaoxing-rice-wine\/\">Shaoxing rice wine<\/a>, salt and white pepper<\/li>\n\n\n\n<li><strong>For the soup<\/strong>: chicken broth (homemade or shop-bought), salt, white pepper, sesame oil and baby bok choy<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Substitutes<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Although pork is a popular filling for Chinese wontons, please feel free to substitute it with chicken, shrimp or beef.<\/li>\n\n\n\n<li>If you don&rsquo;t have white pepper, use <a href=\"https:\/\/redhousespice.com\/sichuan-peppercorn\/\">ground Sichuan pepper <\/a>or <a href=\"https:\/\/redhousespice.com\/five-spice-powder\/\">five spice powder<\/a>.<\/li>\n\n\n\n<li>Chicken broth can be replaced by beef or vegetable broth. A simple homemade chicken stock recipe is available in later sections.<\/li>\n\n\n\n<li>Apart from bok choy, please feel free to use other leafy greens, such as spinach, choy sum, etc.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Filling variations<\/h3>\n\n\n\n<p>There are many ingredients that can go into wonton fillings. Apart from the protein substitutes mentioned above, <strong>you can also use tofu, eggs, vegetables, shiitake mushrooms<\/strong>, etc. Please find more filling ideas in my collection of <a href=\"https:\/\/redhousespice.com\/category\/dumpling-wonton-recipes\/\">dumpling recipes<\/a>.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"choose-the-wrappers\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Choose the wrappers<\/mark><\/h2>\n\n\n\n<p>Essentially, wonton wrappers are square-shaped, very thin sheets of wheat flour-based dough that are used to wrap fillings into sealed parcels. Don&rsquo;t confuse them with <a href=\"https:\/\/redhousespice.com\/homemade-dumpling-wrappers\/\">dumpling wrappers<\/a> for making <a href=\"https:\/\/redhousespice.com\/dumpling-guide\/\">Jiaozi<\/a>\/&#39290;&#23376; or <a href=\"https:\/\/redhousespice.com\/shrimp-pork-shumai\/\">Shumai<\/a>\/&#28903;&#21334; that are round-shaped and slightly thicker.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><a href=\"https:\/\/redhousespice.com\/homemade-wonton-wrappers\/\"><img decoding=\"async\" width=\"1200\" height=\"813\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-wrappers.jpg\" alt=\"A pile of ready made wonton wrappers.\" class=\"wp-image-22895\" srcset=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-wrappers.jpg 1200w, https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-wrappers-400x271.jpg 400w, https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-wrappers-300x203.jpg 300w, https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-wrappers-1024x694.jpg 1024w, https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-wrappers-768x520.jpg 768w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/a><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Varieties<\/h3>\n\n\n\n<p>You can <a href=\"https:\/\/redhousespice.com\/homemade-wonton-wrappers\/\">make wonton wrappers from scratch<\/a> with a pasta machine. Alternatively, use ready-to-use ones found in Chinese\/Asian stores. They come in different sizes ranging from 9cm (3.5in) to 10.5cm (4.2in). Also, you can find them in two colors.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>The yellow ones are often referred to as Cantonese or Hong Kong style. They contain eggs and\/or <a href=\"https:\/\/redhousespice.com\/lye-water\/\">lye water<\/a> thus they have a yellow tone.&nbsp;<\/li>\n\n\n\n<li>The white ones are often referred to as Shanghai style or northern style. They usually are eggless (vegan) and slightly thicker.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p><strong>Both yellow and white wrappers are good<\/strong> for today&rsquo;s recipe. If they&rsquo;re labeled with various thicknesses, <strong>choose the thin or medium version<\/strong> and avoid the thick ones as they tend to be too doughy.<\/p>\n\n\n\n<p>If you have<strong> fresh, chilled wrappers<\/strong>, use them as soon as possible or freeze them straight away after purchasing. If you have frozen ones, defrost them in the fridge overnight.<\/p>\n\n\n\n<p>Since wonton wrappers have fairly low water content and dry out easily, always make sure not to open the package until you&rsquo;ve prepared the filling and are ready to assemble. <strong>Cover them with a damp cloth to avoid drying out<\/strong>.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"prepare-the-filling\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Prepare the filling<\/mark><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/minced-pork-with-scallions-scaled.jpg\" alt=\"minced pork with scallions and seasonings.\" class=\"wp-image-22887\"><\/figure>\n\n\n\n<p>A perfect wonton filling should not only be flavorsome but also tender and moist. Using minced meat with a higher fat content would make it taste less dry. But the more important trick is to <strong>incorporate liquid, either stock or water, into the meat<\/strong>.<\/p>\n\n\n\n<p>As I explained in my <a href=\"https:\/\/redhousespice.com\/dumpling-fillings\/\">Dumpling Filling Guide<\/a>, this specific process is called <em>D&#462; Xi&agrave;n\/&#25171;&#39301;<\/em>, meaning &ldquo;beat the filling&rdquo;.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-filling-scaled.jpg\" alt=\"minced pork wonton filling in a bowl.\" class=\"wp-image-22891\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Put all the ingredients for the filling into a bowl then add a few spoonfuls of chicken stock.<\/li>\n\n\n\n<li>Use chopsticks to mix and swirl the meat constantly. After a while, the liquid will be fully absorbed and the meat will become tender and sticky.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"wrap-the-wontons\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Wrap the wontons<\/mark><\/h2>\n\n\n\n<p>Compared to the way you <a href=\"https:\/\/redhousespice.com\/fold-dumplings\/\">fold Chinese dumplings<\/a>, wontons are easier and quicker to assemble. For today&rsquo;s recipe, I follow one of the most common folding methods (Find other techniques in my post <a href=\"https:\/\/redhousespice.com\/fold-wontons\/\">Six Ways to Fold Wontons<\/a>).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/wonton-folding-method-scaled.jpg\" alt=\"A collage of photos showing the process of folding a wonton.\" class=\"wp-image-22892\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Dip your fingertip or the back of a small spoon in the water then run it along the edge of a wrapper (&#9312;)<\/li>\n\n\n\n<li>Put a portion of the filling mixture in the middle then fold the wrapper into a rectangle parcel. Gently press to seal all around (&#9313;)<\/li>\n\n\n\n<li>Bring two corners together (&#9314;)<\/li>\n\n\n\n<li>Place one on top of another and use a little water to stick them securely (&#9315;)<\/li>\n<\/ul>\n\n\n\n<p>I&rsquo;ve used another slightly different folding technique in my recipe for <a href=\"https:\/\/redhousespice.com\/sichuan-spicy-wonton-in-chili-oil\/\">Sichuan Red Oil Wontons<\/a>. Check it out if you&rsquo;re interested.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"cook-the-wontons\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Cook the wontons<\/mark><\/h2>\n\n\n\n<p>Cooking wontons is simple! Firstly, Bring a large pot of water to a full boil (you can use a <a href=\"https:\/\/redhousespice.com\/wok\/\">wok<\/a> too). Gently slide in the wontons and move them around with a spoon in case any sticks to the bottom.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/boiling-wontons-scaled.jpg\" alt=\"boiling wontons in water.\" class=\"wp-image-22882\"><\/figure>\n\n\n\n<p>Leave to boil over high heat. Once all the wontons rise up to the surface of the water, cook for another 1&frac12; minutes or so.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/cooking-wontons-bok-choy-scaled.jpg\" alt=\"wontons and Bok Choy in boiling water.\" class=\"wp-image-22885\"><\/figure>\n\n\n\n<p>Finally, put in bok choy (or other leafy green) to blanch for about 20 seconds.<\/p>\n\n\n\n<p>&#128718; <strong>NOTE:<\/strong> Depending on the size of your cookware, you may need to cook the wontons in batches. Here is how to judge: if you lay the wontons one beside another in a single layer, the area they cover shouldn&rsquo;t be bigger than the cookware.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"assemble-the-soup\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Assemble the soup<\/mark><\/h2>\n\n\n\n<p>While the wontons are being cooked, heat up the chicken stock in another pot if it&rsquo;s cold. Then spoon it into serving bowls. Season with salt, white pepper and sesame oil (adjust their quantity based on your flavor preferences).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/cooked-wontons-scaled.jpg\" alt=\"four cooked wontons in a spoon.\" class=\"wp-image-22884\"><\/figure>\n\n\n\n<p>Add freshly cooked wontons to the soup, along with blanched bok choy. Garnish with chopped scallions. If you enjoy spicy food as I do, a good spoonful of <a href=\"https:\/\/redhousespice.com\/chinese-chilli-oil\/\">Chinese chili oil<\/a> will give the dish an extra kick.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/pork-wonton-soup-scaled.jpg\" alt=\"A bowl of wontons with soup and blanched Bok Choy.\" class=\"wp-image-22889\"><\/figure>\n\n\n\n<p>Sometimes, I also sprinkle extra toppings over the wontons, such as preserved mustard stem (<em>Zh&agrave; C&agrave;i\/&#27048;&#33756;<\/em>), <a href=\"https:\/\/redhousespice.com\/dried-shrimp\/\">papery dried shrimp<\/a> (<em>Xi&#257; P&iacute;\/&#34430;&#30382;<\/em>), etc.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Simple homemade stock<\/h3>\n\n\n\n<p>If you have time, make the <a href=\"https:\/\/redhousespice.com\/homemade-chicken-stock\/\">chicken stock<\/a> from scratch. It&rsquo;s tasty and very simple to cook.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Put a whole chicken in a large pot filled with cold water. Bring it to a boil then skim off any impurity floating on the surface.<\/li>\n\n\n\n<li>Add 2 stalks of scallions and a few slices of ginger. Leave to simmer over low heat for 40-50 minutes. Then take out the chicken, scallions and ginger.<\/li>\n<\/ul>\n\n\n\n<p>&#128718;<strong> TIP:<\/strong> You can tear the chicken meat off the bones and make <a href=\"https:\/\/redhousespice.com\/mouth-watering-chicken\/\">Sichuan Mouthwatering Chicken<\/a> or add it to <a href=\"https:\/\/redhousespice.com\/chow-mein\/\">Chow Mein<\/a>, <a href=\"https:\/\/redhousespice.com\/egg-fried-rice\/\">Fried Rice<\/a>, etc.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"make-ahead-and-freeze\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Make ahead and freeze<\/mark>&nbsp;<\/h2>\n\n\n\n<p>Want to have wonton soup regularly? Make the wontons in big batches then. Like homemade <a href=\"https:\/\/redhousespice.com\/best-chinese-dumplings\/\">dumplings<\/a> and <a href=\"https:\/\/redhousespice.com\/alkaline-noodles-ramen-noodles\/\">ramen<\/a>, wontons freeze very well and can be cooked straight away without defrosting.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/07\/uncooked-wontons-scaled.jpg\" alt=\"uncooked wontons on a tray.\" class=\"wp-image-22890\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Right after you fold the wontons, lay them in a single layer over a tray\/baking sheet. To prevent sticking, dust the tray with flour or line it with parchment paper. Put the tray into the freezer.<\/li>\n\n\n\n<li>Once the wontons become solid, take them off the tray and transfer them to air-tight bags or containers. You may store them in the freezer for up to 3 months.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"cook-frozen-wontons\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#365e5e\" class=\"has-inline-color\">Cook frozen wontons<\/mark><\/h2>\n\n\n\n<p>You <strong>don&rsquo;t need to defrost <\/strong>wontons before cooking (do not try to do that). Follow the same instructions for cooking fresh wontons. Here are two tips to follow:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Do not cook too many frozen wontons at once (a little less than the number for fresh ones).<\/li>\n\n\n\n<li>Once you add them to boiling water, gently move them around a few times with a spoon.
