Traditionally, people in northern China live mainly on wheat-flour based dishes such as noodles and bread. Unlike noodles, Chinese bread hasn&rsquo;t gained as much attention as it deserves.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"my-personal-memories\"><span style=\"color: #4d8682;\">My personal memories<\/span><\/h2>\n\n\n\n<p>Growing up in Gansu, a province located in the northwest of China, I have many childhood memories related to the delicious bread made by my parents. I still remember that every now and then my mum or my dad would ride their bicycle to the local &ldquo;Grain and oil supply centre&rdquo; and bring home a 25kg bag of flour for making bread and noodles.<\/p>\n\n\n\n<p>I spent lots of time playing around my parents while meals were prepared. I relish the first bite of freshly cooked bread. Even though it was extremely hot, the natural wheat flavour of the bread was pure contentment!<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"popular-types-of-bread\"><span style=\"color: #4d8682;\">Popular types of bread<\/span><\/h2>\n\n\n\n<p>In terms of cooking method, Chinese bread is either steamed or pan-fried (oven baking is not a home cooking tradition in Chinese household) and I love both types equally. In most cases, the dough involves only 2-3 ingredients: flour, water and yeast (if needed).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span style=\"color: #000000;\">Mantou\/&#39314;&#22836;, plain steamed buns<\/span><\/h3>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/redhousespice.com\/mantou-steamed-buns\/\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/01\/Mantou-steamed-buns-pinterest-scaled.jpg\" alt=\"Chinese steamed buns in a bamboo basket.\" class=\"wp-image-7666\"><\/a><\/figure>\n\n\n\n<p>In Chinese families, bread is served throughout the day. A <a href=\"https:\/\/redhousespice.com\/mantou-steamed-buns\/\">plain steamed bun (Mantou, &#39314;&#22836;)<\/a> with a bowl of Chinese congee and some preserved vegetables would make a great breakfast. As the buns are normally cooked in the evening (it&rsquo;s a time-consuming job), my parents would reheat them briefly in a steamer in the morning to serve them hot. Sometimes, I would cut the bun in half and spread with some fermented bean curd (aka Chinese cheese) to make a fried egg sandwich. Very comforting indeed.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Bing\/&#39292;, pan baked flatbread<\/h3>\n\n\n\n<h3 class=\"wp-block-heading\"><a href=\"https:\/\/redhousespice.com\/spring-onion-flatbread-leavened\/\"><img decoding=\"async\" class=\"alignnone wp-image-7728 size-full\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/Spring-onion-flatbread-leavened-p01-scaled.jpg\" alt=\"Leavened scallion flatbread\" width=\"924\" height=\"1387\"><\/a><\/h3>\n\n\n\n<p>For lunch and dinner, bread is often served with savoury dishes of meat and vegetable, and a bowl of soup or congee on the side. My favourite was the leavened flatbread (Bing,&nbsp;&#39292;) which my mum used to cook in an old-fashioned cast-iron frying pan. She didn&rsquo;t use any oil thus the bread had a slightly burnt taste which I found very pleasant and appealing. Inspired by my mum&rsquo;s best flatbread, I wrote a recipe for &ldquo;<a href=\"https:\/\/redhousespice.com\/spring-onion-flatbread-leavened\/\">Leavened scallion flatbread<\/a>&rdquo; on my blog as a way to pay tribute to her effort.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"other-common-types\"><span style=\"color: #4d8682;\">Other common types<\/span><\/h2>\n\n\n\n<p>Apart from the two types of plain bread I mentioned above, you can find numerous varieties of bread in restaurants, grocery shops and food stalls across China. Here are some examples:<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/02\/Chinese-flower-rolls-7-scaled.jpg\" alt=\"Chinese flower rolls, steamed &amp; pan-fried\" class=\"wp-image-8387\"><\/figure>\n\n\n\n<p><strong>&#9650; <a href=\"https:\/\/redhousespice.com\/scallion-flower-rolls\/\">Hua Juan<\/a> (Flower rolls, &#33457;&#21367;)<\/strong> are a variety of Chinese steamed buns. They are layered with a tasty filling made of scallions, spices, salt and oil. I love cooking them in two ways: steaming or pan-frying.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/redhousespice.com\/easy-chinese-tortilla\/\"><img decoding=\"async\" width=\"1200\" height=\"1200\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck.jpg\" alt=\"wrapping duck with a thin pancake\" class=\"wp-image-19347\" srcset=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck.jpg 1200w, https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck-400x400.jpg 400w, https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck-300x300.jpg 300w, https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck-1024x1024.jpg 1024w, https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck-150x150.jpg 150w, https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck-768x768.jpg 768w, https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck-500x500.jpg 500w, https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/wrapping-duck-360x360.jpg 360w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/a><\/figure>\n\n\n\n<p><strong>&#9650; <a href=\"https:\/\/redhousespice.com\/easy-chinese-tortilla\/\">Chunbing<\/a> (Spring pancake, &#26149;&#39292;)&nbsp;<\/strong> is a paper-thin steamed pancake which is used to wrap slices of the famous Peking duck.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/05\/thick-and-thin-scallion-pancakes-scaled.jpg\" alt=\"three thick scallion pancakes and two thin ones\" class=\"wp-image-20713\"><\/figure>\n\n\n\n<p><strong>&#9650; <a href=\"https:\/\/redhousespice.com\/spring-onion-pancake\/\">Cong You Bing<\/a> (&#33905;&#27833;&#39292;)<\/strong>, known as scallion pancake in the West, is a layered, savoury, crispy flatbread popular throughout China. It&rsquo;s pan-fried in oil and seasoned with spring onion and spices. <a href=\"https:\/\/redhousespice.com\/spiced-beef-flatbread\/\">Crispy Stuffed Flatbread (&#38149;&#30420;)<\/a> is another example of this type.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/12\/Chinese-pork-burger-Rou-Jia-Mo-scaled.jpg\" alt=\"Two chinese pork burgers held by a hand\" class=\"wp-image-18645\"><\/figure>\n\n\n\n<p><strong>&#9650; <\/strong><a href=\"https:\/\/redhousespice.com\/chinese-pork-burger\/\">Rou Jia Mo<\/a> (Chinese pork burger,&#32905;&#22841;&#39309;) is one of the most popular street food that you can find in the city of Xi&rsquo;an, the home of the Terracotta Army. The &ldquo;burger&rdquo; bun has a unique dense texture.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"924\" height=\"1386\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2019\/02\/Steamed-bao-buns-13.jpg\" alt=\"A fluffy steamed bao bun dressed with chilli oil. They can be either steamed or pan-fried. <a href=\"https:\/\/redhousespice.com\/pan-fried-pork-buns\/\">Sheng Jian Bao<\/a> (pan-fried pork buns, &#29983;&#29006;&#21253;) from Shanghai is one of the most famous of this kind. <a href=\"https:\/\/redhousespice.com\/chinese-meat-pies\/\">Chinese Meat Pies<\/a>, though differently shaped, follow a similar principle.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/04\/Chinese-doughnut-stick-youtiao-scaled.jpg\" alt=\"Chinese doughnut sticks in a basket\" class=\"wp-image-15442\"><\/figure>\n\n\n\n<p><strong>&#9650; <\/strong><a href=\"https:\/\/redhousespice.com\/chinese-doughnut-stick\/\">Youtiao<\/a> (&#27833;&#26465;), know as Chinese doughnut or Chinese churros, is a typical breakfast staple food consumed every day across the country. It&rsquo;s deep-fried leavened dough with a hint of saltiness and considered the best companion for soy milk.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/chinese-bread-nang-scaled.jpg\" alt=\"Xinjiang style Nang bread sold at a street stall.\" class=\"wp-image-7731\"><\/figure>\n\n\n\n<p><strong>&#9650; Nang (Uyghur flatbread, &#39317;)<\/strong> is a speciality originating from Xinjiang, an autonomous territory in northwest China. It&rsquo;s baked in tannurs (a type of oven that&rsquo;s built with sun-dried earth bricks) and can be stored for a very long period of time thanks to its low water content.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"the-cultural-significance\"><span style=\"color: #4d8682;\">The cultural significance<\/span><\/h2>\n\n\n\n<p>Apart from daily consumption, Chinese bread also has cultural significance. For example, families would cook <a href=\"https:\/\/redhousespice.com\/mantou-steamed-buns\/\">steamed buns<\/a> two days before the Chinese New Year (Spring festival, &#26149;&#33410;). This is part of the ancestor worship ritual. Sometimes, buns would be placed in front of a home altar.<\/p>\n\n\n\n<figure class=\"wp-block-image alignnone\"><a href=\"https:\/\/redhousespice.com\/mantou-steamed-buns\/\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2018\/01\/Steamed-bun-with-chinese-dates-scaled.jpg\" alt=\"A steamed bun decorated with Chinese dates.\" class=\"wp-image-7733\"><\/a><figcaption class=\"wp-element-caption\">A steamed bun decorated with Chinese dates for the Chinese New Year.<\/figcaption><\/figure>\n\n\n\n<p>I had lots of fun helping my parents shape the buns as on this occasion you are supposed to make <a href=\"https:\/\/redhousespice.com\/mantou-steamed-buns\/\">steamed buns<\/a> into various shapes: animals, flowers or some symmetrical forms. Once when my grandma (who lived nearly 2000 km away from us) visited us during the new year holiday, she kindly taught me how to make a fish-like bun.
