I&rsquo;ve chosen two classic options for this recipe: <strong>Chinese sausages or marinated chicken<\/strong>.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/09\/scorched-rice-scaled.jpg\" alt=\"scorched rice.\" class=\"wp-image-23795\"><\/figure>\n\n\n\n<h2 class=\"wp-block-heading has-text-color\" style=\"color:#365e5e\" id=\"pro-tips\">Pro tips<\/h2>\n\n\n\n<p>Here are a few tips before you dive into the details of the recipe.<\/p>\n\n\n\n<ul style=\"background-color:#ecf4f2\" class=\"wp-block-list has-background\">\n<li>Clay pot produces the most authentic result, but other cookware would work too.<\/li>\n\n\n\n<li>Two classic toppings can be used individually or combined.<\/li>\n\n\n\n<li>Create the signature scorched rice base by using less water and adding oil.<\/li>\n\n\n\n<li>Make an umami sauce with several common Chinese condiments.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading has-text-color\" style=\"color:#365e5e\" id=\"clay-pots-alternative-cookware\">Clay pots &amp; alternative cookware<\/h2>\n\n\n\n<p>A special type of crockery used in many Asian cuisines, clay pots have several advantages.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>It distributes heat evenly and retains it very well.<\/li>\n\n\n\n<li>The moisture circulates well thanks to its porous nature.<\/li>\n\n\n\n<li>Its bowl shape makes it possible to heat the side to create a crispy rice base.<\/li>\n\n\n\n<li>You can cook and serve the dish in the same pot and the food stays warm for a long time.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/09\/clay-pot-with-measurement-scaled.jpg\" alt=\"An empty chinese clay pot with a measuring tape.\" class=\"wp-image-23820\"><\/figure>\n\n\n\n<p>You can find clay pots in Asian\/Chinese stores, as well as online. The one I use is of classic Chinese style known as <em>Bao Zai\/&#29042;&#20180;<\/em> or <em>Sha Guo\/&#30722;&#38149;<\/em> (<em>See image above<\/em>). It&rsquo;s glazed inside, but unglazed outside. The wire frame holds the shape of the pot as it expands when heated. <\/p>\n\n\n\n<p>Other types of clay pots (e.g. fully glazed ones, or Korean and Japanese ones) are also suitable.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p>&#128718;<strong> N.B:<\/strong> Always check the instructions when using a new clay pot as some of them can&rsquo;t be used on electric\/induction hobs (or you need to pre-soak the pot before heating).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Don&rsquo;t have a clay pot?<\/h3>\n\n\n\n<p>Alternative cookware includes <strong>cast-iron pots (dutch oven), and regular pots with a thick, heavy bottom<\/strong>. They need to have a fitted lid.<\/p>\n\n\n\n<p>You may also use a <strong>rice cooker or Instant Pot<\/strong> to make this dish (just like how you cook <a href=\"https:\/\/redhousespice.com\/chinese-style-one-pot-chicken-rice\/\">One-Pot Hainanese Chicken Rice<\/a>). Although the end result lacks the authentic crispy rice base, I guarantee it still makes a delicious meal.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading has-text-color\" style=\"color:#365e5e\" id=\"ingredients-required\">Ingredients required<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Rice choices<\/h3>\n\n\n\n<p><strong>Jasmine rice<\/strong> (aka Thai fragrant rice) is the best choice for Chinese clay pot rice. It has a subtle fragrance and an ideal level of stickiness. Other types of long-grain white rice can be used as substitutes, but I don&rsquo;t recommend you use short-grain rice as it&rsquo;s too sticky for this recipe.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cooking liquid &amp; ratio<\/h3>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/09\/rice-and-water-scaled.jpg\" alt=\"rice and water in bowls.\" class=\"wp-image-23783\"><\/figure>\n\n\n\n<p>You can simply use water to cook the rice, just like <a href=\"https:\/\/redhousespice.com\/jasmine-rice-on-stove\/\">how you cook regular steamed rice<\/a>. To further enrich the taste, replace water with unsalted stock or mushroom water (in which <a href=\"https:\/\/redhousespice.com\/shiitake-mushrooms\/\">dried shiitake mushrooms<\/a> are soaked).<\/p>\n\n\n\n<p><strong>The rice to liquid ratio is about 1:1 by volume<\/strong>. That is to say, for 1 cup of rice, you&rsquo;d need 1 cup of water or stock.<\/p>\n\n\n\n<p>This differs from the ratio I recommend for cooking plain rice on the stove as clay pot rice tastes better when a little firmer. That said, please feel free to slightly increase the liquid quantity if you prefer a softer, stickier texture.<\/p>\n\n\n\n<p>This ratio works when using a clay pot, cast iron pot, or heavy-bottom pot. If using a rice cooker or Instant Pot, follow the ratio you normally apply.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Topping variations<\/h3>\n\n\n\n<p>Classic Chinese clay pot rice comes with a variety of toppings. Today&rsquo;s recipe introduces two of the most popular versions.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/09\/sausage-and-chicken-scaled.jpg\" alt=\"uncooked chinese sausage and chicken thighs.\" class=\"wp-image-23784\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>One is with Chinese sausage (<em>Lap Cheong\/&#33098;&#32928;<\/em>) which is available in Chinese\/Asian stores and has a pretty long shelf life (Try my recipe for <a href=\"https:\/\/redhousespice.com\/sausage-rice\/\">Easy Chineses Sausage Rice<\/a> which doesn&rsquo;t require a clay pot).<\/li>\n\n\n\n<li>The other option is marinated chicken thigh pieces.<\/li>\n\n\n\n<li>You may choose either of them, or combine them to create an even yummier meal.<\/li>\n<\/ul>\n\n\n\n<p>&#128718; <strong>TIP<\/strong>: Apart from these two toppings, you may also use Chinese cured pork belly (<em>Lap Yuk\/&#33098;&#32905;<\/em>), pork ribs, shrimp, smoked\/five-spice tofu, mushrooms, or vegetables.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Sauce &amp; garnish<\/h3>\n\n\n\n<p>The third essential element of clay pot rice is the sauce that flavors everything and gives the dish an enticing look. It&rsquo;s made of several <a href=\"https:\/\/redhousespice.com\/10-must-have-chinese-condiments\/\">basic Chinese condiments<\/a>:<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/09\/sauce-and-scallions-scaled.jpg\" alt=\"Mixed sauce and scallions.\" class=\"wp-image-23786\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">Light soy sauce<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">Dark soy sauce<\/a><\/li>\n\n\n\n<li>Oyster sauce<\/li>\n\n\n\n<li>Sesame oil<\/li>\n\n\n\n<li><a href=\"https:\/\/redhousespice.com\/shaoxing-rice-wine\/\">Shaoxing rice wine<\/a><\/li>\n\n\n\n<li>White pepper<\/li>\n\n\n\n<li>Sugar<\/li>\n<\/ul>\n\n\n\n<p>You&rsquo;d also need some finely chopped scallions (green onion\/spring onion). To make the meal more nutritiously balanced, add some simply blanched leafy greens on the side.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading has-text-color\" style=\"color:#365e5e\" id=\"cooking-procedure\">Cooking procedure<\/h2>\n\n\n\n<p>The following instructions apply when using a clay pot, cast-iron pot, or heavy-bottom pot. Cover with a lid. Turn the heat to the lowest. Leave to cook for 10 minutes.<\/p>\n\n\n\n<p>&#128718; <strong>N.B.<\/strong> Depending on the performance of your cooker and the nature of your pot, the cooking time may vary slightly. Please feel free to adjust.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Step 4: Scorch the rice<\/h3>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/09\/pouring-oil-to-claypot-scaled.jpg\" alt=\"pouring oil into a clay pot.\" class=\"wp-image-23788\"><\/figure>\n\n\n\n<p>All along the lid of the pot, pour a little neutral-flavored cooking oil over. The lid of my clay pot isn&rsquo;t that tight so the oil flows inside quickly. If your lid is very tight, you may need to briefly open the lid and pour the oil along the perimeter of the pot (remember to put the lid back on quickly to retain the heat).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2022\/09\/claypot-over-gas-fire-scaled.jpg\" alt=\"tilted clay pot over gas cooker.\" class=\"wp-image-23787\"><\/figure>\n\n\n\n<p>Turn the heat up to medium and continue cooking to scorch the bottom of the rice. To achieve the most authentic result, heat all areas by tilting the clay pot at different angles. If you are making this dish for the first time, I suggest you add the sauce gradually. Add the meat topping from the beginning. Cook as usual, then mix in the sauce. Increase the ingredient quantity proportionally. class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Rinse the rice under runny water then drain well. Put it into the pot along with 1 cup of water.<\/span><\/div><\/li><li id=\"wprm-recipe-23806-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Cook over medium-low heat uncovered until the water levels with the rice (watch attentively to avoid drying out the water).<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Add the topping<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-23806-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Place the topping, either the whole links of sausages or the marinated chicken, over the rice (do not overlap the meat). Turn the heat up to medium and continue cooking to scorch the bottom of the rice. If you&rsquo;re using a gas cooker, try tilting the pot at different angles to heat the side.<\/span><\/div><\/li><li id=\"wprm-recipe-23806-step-3-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Once you sense a little smoke or a subtle burnt smell, remove the pot from the heat immediately (The scorching process took me about 4 minutes).<\/span><\/div><\/li><li id=\"wprm-recipe-23806-step-3-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">If you use sausages, take them out at this moment and cut into thin slices. Put them back in the pot.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Season &amp; mix<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-23806-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">While waiting for the rice to cook, mix all the ingredients for the sauce. You may also use a cast iron pot or a regular pot with a heavy, thick bottom. Follow the same method to cook. You could use a rice cooker or Instant Pot for this recipe if you don&rsquo;t care about getting the scorched rice base. Put in the rinsed rice and the meat together and use your usual rice-to-water ratio.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">3. Depending on the performance of your cooker and the nature of your pot, the cooking time may vary slightly. Please feel free to adjust.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">4. The lid of my clay pot isn&rsquo;t that tight so the oil flows inside quickly.
