It&rsquo;s a very popular ingredient in Chinese cooking, particularly Cantonese cuisine.<\/p>\n\n\n\n<p>Despite the correlation of their names, Chinese broccoli doesn&rsquo;t resemble <a href=\"https:\/\/redhousespice.com\/broccoli-with-garlic-sauce\/\">regular broccoli<\/a> in appearance, although they both are members of the cabbage family. It has large, thick leaves, and slender stems similar to that of <a href=\"https:\/\/en.wikipedia.org\/wiki\/Broccolini\" target=\"_blank\" rel=\"noreferrer noopener\">broccolini<\/a> (a hybrid of broccoli and Chinese broccoli). Sometimes you&rsquo;d see florets hidden in between the leaves, but they&rsquo;re tiny.<\/p>\n\n\n\n<p>In terms of taste, it shares some of the flavour profile of regular broccoli but with a more pronounced earthy tone and a noticeable taste of bitterness. It&rsquo;s not suitable to eat it raw.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"how-to-purchase-and-store\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">How to purchase and store<\/mark><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/raw-Chinese-broccoli-scaled.jpg\" alt=\"Raw Chinese broccoli in a colander.\" class=\"wp-image-18098\"><\/figure>\n\n\n\n<p>You should be able to find Chinese broccoli in the fresh produce section of your local Chinese\/Asian supermarkets. There is a chance you might mistake <em>Choy Sum<\/em> (&#33756;&#24515;), another type of Chinese leafy green, for it. Check the label on the package, or ask a shop assistant if unsure.<\/p>\n\n\n\n<p>Choose the ones that look fresh, feel firm to touch. The small florets, if any, should only be flower buds. <strong>Open flowers indicate the vegetable has passed its prime time for consumption<\/strong>.<\/p>\n\n\n\n<p>You can store it in the fridge for several days. To prolong its freshness, I suggest you pat dry the leaves and stems to remove any moisture. Then loosely wrap it with kitchen paper and put into an airtight bag\/container.<\/p>\n\n\n\n<p>&#128718;<strong>SUBSTITUTE<\/strong>: If you have trouble sourcing Chinese broccoli, <strong>get some broccolini instead<\/strong>. For today&rsquo;s two recipes, they&rsquo;re interchangeable.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"wash-and-trim-first\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Wash and trim first<\/mark><\/h2>\n\n\n\n<p>Like how you prepare any leafy green veggies, it&rsquo;s important to take the time to wash Chinese broccoli properly. Firstly, soak it in plenty of water for a few minutes or so to loosen any dirt clung to the surface. Then rinse under running water while giving it a gentle rub.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/peeling-chinese-broccoli-scaled.jpg\" alt=\"peeling the stem of Chinese broccoli\" class=\"wp-image-18109\"><\/figure>\n\n\n\n<p>All parts of this vegetable, leaves, stems and little florets are edible. But sometimes the ends of the stems are too hard and fibrous to eat. Use the same methods as for asparagus. Cut off the tough ends. If eating the stem without further slicing (e.g. for the blanched version), remove the outer layer of the stem with a vegetable peeler and keep the tender middle.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"two-ways-to-cook-it\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Two ways to cook it<\/mark><\/h2>\n\n\n\n<p><a href=\"https:\/\/redhousespice.com\/category\/vegetable-recipes\/\">Vegetable dishes<\/a> are indispensable for a typical Chinese meal. Chinese broccoli is among the most popular choices. Today I&rsquo;m introducing two classic ways to cook it (because I love both equally).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/two-plates-of-chinese-broccoli-scaled.jpg\" alt=\"Two plates of Chinese broccoli\" class=\"wp-image-18103\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Option 1 (<em>right<\/em>): <strong>Blanched Chinese Broccoli with Oyster Sauce <\/strong>(&#34461;&#27833;&#33445;&#34013;). For me, this is a must-order dish when visiting Cantonese dim sum restaurants.<\/li>\n\n\n\n<li>Option 2 (<em>left<\/em>): <strong>Stir-fried Chinese Broccoli with Ginger and Garlic<\/strong> (&#23004;&#33948;&#28818;&#33445;&#34013;). The natural taste of the vegetable shines in this dish. It&rsquo;s lightly seasoned but tastes so satisfying.<\/li>\n<\/ul>\n\n\n\n<p>Both methods involve short lists of ingredients, simple cooking procedures and the maximum preservation of the nutrition.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"blanched-chinese-broccoli-with-oyster-sauce\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Blanched Chinese Broccoli with Oyster Sauce<\/mark><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">What you need<\/h3>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/ingredients-for-oyster-sauce-chinese-broccoli-scaled.jpg\" alt=\"seasoning ingredients for blanched Chinese broccoli\" class=\"wp-image-18108\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Salt and oil<\/strong>, for the blanching water<\/li>\n\n\n\n<li><strong>Oyster sauce<\/strong>, the key seasoning<\/li>\n\n\n\n<li><strong>Dark soy sauce<\/strong>, for an appetising colour<\/li>\n\n\n\n<li><strong>Garlic,<\/strong> for extra flavour<\/li>\n\n\n\n<li><strong>Sugar<\/strong>, to balance the bitterness<\/li>\n\n\n\n<li><strong>Cornstarch<\/strong>, to thicken the sauce<\/li>\n<\/ul>\n\n\n\n<p>&#128718;<strong>TIP<\/strong>: Regular oyster sauce contains oyster extract and wheat. Dark soy sauce has wheat too. But it&rsquo;s possible to use substitutes for special diets:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Vegan<\/strong> alternative: mushroom vegetarian stir-fry sauce<\/li>\n\n\n\n<li><strong>Gluten-free<\/strong> alternatives: gluten-free oyster sauce and gluten-free soy sauce (or tamari).<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Cooking process<\/h3>\n\n\n\n<p>For this dish, Chinese broccoli is cooked and served whole so no chopping is required (As mentioned earlier, remember to trim off the tough ends and peel the stem).<\/p>\n\n\n\n<p><strong>Step 1: blanch Chinese broccoli<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/blanching-chinese-broccoli-scaled.jpg\" alt=\"blanching Chinese broccoli in water.\" class=\"wp-image-18112\"><\/figure>\n\n\n\n<p>Bring ample water, with salt and oil, to a full boil then blanch Chinese broccoli until it&rsquo;s cooked. This step seems extremely simple, but I&rsquo;d like to point out a few tips for the best result.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Make sure the water is plenty so it won&rsquo;t take too long to cook the vegetable. Quick blanching helps to retain the crunchy texture.<\/li>\n\n\n\n<li>Don&rsquo;t stint on the salt and oil. Well-salted blanching water helps to keep the vibrant green colour. A drop of oil gives it a shiny coating when drained.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p><strong>Step 2: Make the sauce<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/simmering-sauce-with-garlic-scaled.jpg\" alt=\"simmering sauce with garlic.\" class=\"wp-image-18110\"><\/figure>\n\n\n\n<p>While waiting for the Chinese broccoli to cook, start cooking the sauce on another burner if available. In a wok\/pan over low heat, sizzle the sliced garlic in a little oil until fragrant. Add oyster sauce, <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">dark soy sauce<\/a>, sugar, cornstarch and water to a bowl. Mix very well then pour into the wok\/pan. Stir and simmer until it thickens (but is still flowable).<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p><strong>Step 3: Assemble and serve<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/blanched-chinese-broccoli-seasoned-with-oyster-sauce-scaled.jpg\" alt=\"Chinese broccoli with oyster sauce and garlic.\" class=\"wp-image-18099\"><\/figure>\n\n\n\n<p>Why not do it in the restaurant fashion? Lay the blanched broccoli neatly on a plate, namely, place each piece straight with all the stems facing one direction. Then pour the sauce over, along with the garlic.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"stir-fried-chinese-broccoli-with-ginger-and-garlic\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Stir-fried Chinese Broccoli with Ginger and Garlic<\/mark><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">What you need<\/h3>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/ingredients-for-chinese-broccoli-stirfry-scaled.jpg\" alt=\"Four ingredients for stir-fried Chinese broccoli.\" class=\"wp-image-18107\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Cooking oil,<\/strong> for stir-frying. Chinese restaurants often use lard or chicken fat instead. Please feel free to substitute if you&rsquo;re looking for extra deliciousness.<\/li>\n\n\n\n<li><strong>Ginger and garlic<\/strong>, freshly minced<\/li>\n\n\n\n<li><strong>Shaoxing rice wine<\/strong>. For this recipe you may also use Chinese rose wine (Mei Gui Lu Jiu) or dry sherry. Skip it If you want it to be alcohol-free.<\/li>\n\n\n\n<li><strong>Salt and sugar<\/strong><\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Cooking process<\/h3>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/slicing-chinese-broccoli-scaled.jpg\" alt=\"slicing Chinese broccoli.\" class=\"wp-image-18111\"><\/figure>\n\n\n\n<p>Since this is a quick stir-fry, you&rsquo;ll need to slice Chinese broccoli into small pieces. Cut the stem part diagonally into thin slices. Pour in oil then add ginger and garlic. Leave to sizzle to release their flavour. It should take a very short time. Be attentive not to burn them.<\/p>\n\n\n\n<p><strong>Step 2: Fry Chinese broccoli<\/strong><\/p>\n\n\n\n<p>Put in the sliced Chinese broccoli. Toss well to evenly distribute the oil. Pour in <a href=\"https:\/\/redhousespice.com\/shaoxing-rice-wine\/\">Shaoxing rice wine<\/a>. Cover with a lid immediately and leave to steam for about 1 minute.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p><strong>Step 3: Season and serve<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/11\/stir-frying-Chinese-broccoli-scaled.jpg\" alt=\"stir frying chinese broccoli in a wok.\" class=\"wp-image-18113\"><\/figure>\n\n\n\n<p>Uncover and sprinkle with salt and sugar. Scoop and toss for a further 30 seconds or so. Taste to check the doneness if unsure. Be aware that if your cookware has a non-stick coating, do not heat it up empty.
