There&rsquo;re many classic dishes featuring this flavourful cut of meat: <a href=\"https:\/\/redhousespice.com\/red-cooked-pork-belly\/\">Red-Braised Pork<\/a> (&#32418;&#28903;&#32905;), <a href=\"https:\/\/redhousespice.com\/twice-cooked-pork-fast-version\/\">Twice-cooked Pork<\/a> (&#22238;&#38149;&#32905;), <a href=\"https:\/\/redhousespice.com\/hunan-pork\/\">Hunan Pork Stir-fry<\/a> (&#28246;&#21335;&#23567;&#28818;&#32905;), <a href=\"https:\/\/redhousespice.com\/chinese-pork-burger\/\">Chinese Pork Burger<\/a> (&#32905;&#22841;&#39309;), etc.<\/p>\n\n\n\n<p>Today&rsquo;s recipe Lu Rou Fan\/&#21348;&#32905;&#39277; (Taiwanese pork rice bowl) shows you yet another way to enjoy it. It&rsquo;s as delicious as the others, if not better.<\/p>\n\n\n\n<p>A type of all-in-one rice bowl dish (known as Gai Fan\/&#30422;&#39277; in Chinese), Lu Rou Fan consists of braised fatty pork, hard-boiled eggs (flavoured in the meat broth), <a href=\"https:\/\/redhousespice.com\/jasmine-rice-on-stove\/\">steamed rice<\/a> and blanched veggies. Pork belly, the star component of the dish, is richly seasoned, cooked to an almost gelatinous texture and coated with a layer of sticky broth. Simply irresistible!<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"ingredients\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Ingredients<\/mark><\/h2>\n\n\n\n<p>Here is all that you need for cooking Lu Rou Fan:<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/cutting-pork-belly-scaled.jpg\" alt=\"cutting pork belly with a knife\" class=\"wp-image-15739\"><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pork belly with skin on, cut into strips<\/li>\n\n\n\n<li>Shallots (or red onion), thinly sliced, plus oil for frying<\/li>\n\n\n\n<li><a href=\"https:\/\/redhousespice.com\/shiitake-mushrooms\/\">Shiitake mushrooms<\/a>, rehydrated and diced<\/li>\n\n\n\n<li>Eggs<\/li>\n\n\n\n<li>Garlic, minced<\/li>\n\n\n\n<li>Rock sugar (or regular sugar)<\/li>\n\n\n\n<li>Light &amp; dark soy sauce<\/li>\n\n\n\n<li>Shaoxing rice wine (skip for an alcohol-free version)<\/li>\n\n\n\n<li>Chinese <a href=\"https:\/\/redhousespice.com\/five-spice-powder\/\">five-spice powder<\/a> &amp; white pepper<\/li>\n\n\n\n<li>Rice<\/li>\n\n\n\n<li>Green vegetable<\/li>\n<\/ul>\n\n\n\n<p>&#128718;<strong> Can I use other cuts of pork?<\/strong> Obviously, this isn&rsquo;t a healthy diet choice but an indulgent dish. So I don&rsquo;t recommend you replace pork belly with other cuts or another type of meat.&nbsp;&nbsp;<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/braised-pork-and-rice-on-spoon-scaled.jpg\" alt=\"braised pork and rice on a spoon\" class=\"wp-image-15732\"><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"cooking-procedure\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Cooking procedure<\/mark><\/h2>\n\n\n\n<p>It takes about one and a half hour to prepare and cook this dish (It may seem long but it&rsquo;s totally worth the effort!). Before we go into details on each step, here is a summary of the workflow.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Fry sliced shallots in oil until crispy (skip this step if using shop-bought version). Cook hard-boiled eggs over another burner at the same time.<\/li>\n\n\n\n<li>Fry pork belly strips (without oil) until slightly golden then add aromatics, seasonings, fried shallots, shiitake mushroom, eggs and water. Leave to simmer until tender.<\/li>\n\n\n\n<li>While waiting, cook rice and blanch green vegetable of your choice. Assemble the bowl once the pork is done.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading has-black-color has-text-color has-link-color wp-elements-599118db60ecb5d91da456bdd8466b39\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Step 1: make crispy shallots<\/mark><\/h3>\n\n\n\n<p>Crispy shallots (fried shallots, &#27833;&#33905;&#37221;) are an essential (and magical) ingredient for Lu Rou Fan. They add an oniony taste and aromatic sweetness making the dish different from other types of Chinese style braised pork, such as the classic <a href=\"https:\/\/redhousespice.com\/red-cooked-pork-belly\/\">Hong Shao Rou (Red braised pork belly, &#32418;&#28903;&#32905;)<\/a>. They also help to thicken the consistency of the broth.<\/p>\n\n\n\n<p>Although shop-bought crispy shallots are available in most Chinese\/Asian shops, I highly recommend you make your own if time permits. Believe me! It tastes so much better.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/fried-shallots-scaled.jpg\" alt=\"frying sliced shallots in oil\" class=\"wp-image-15740\"><\/figure>\n\n\n\n<p>Heat up neutral cooking oil in a wok\/pan then put in thinly sliced shallots (or red onion). The quantity of oil should be enough to allow the shallots to float.<\/p>\n\n\n\n<p>Fry over medium heat and remove from heat as soon as the shallots brown (overcooking would result in a bitter taste). Drain through a sieve. Set aside the fried shallots for later use.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p>&#128718; <strong>What to do with the leftover<\/strong> <strong>oil<\/strong>?&nbsp;It&rsquo;s not going to be wasted for sure! Use it like the classic <a href=\"https:\/\/redhousespice.com\/make-use-spring-onion-oil\/\">Scallion Oil (Cong You\/&#33905;&#27833;)<\/a> which can be enjoyed in so many delicious ways (Shanghai <a href=\"https:\/\/redhousespice.com\/spring-onion-oil-noodles\/\">Scallion Oil Noodles<\/a> is a great example).<\/p>\n\n\n\n<p>&#128718; <strong>Cook eggs at the same time.<\/strong>&nbsp;It took me about 7 minutes to fry the shallots. If you have another burner available, I suggest you cook some hard-boiled eggs during this time. You&rsquo;ll need them in the next step.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Step 2: cook the pork<\/mark><\/h3>\n\n\n\n<p>Put the pork strips into an empty wok\/pan over medium-high heat (you don&rsquo;t need any oil). Stir occasionally to evenly heat the meat. You&rsquo;ll see it changing colour and some oil appearing. So what you&rsquo;re doing is actually frying the meat with its own fat.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/frying-pork-in-wok-scaled.jpg\" alt=\"frying pork belly strips in a wok\" class=\"wp-image-15747\"><\/figure>\n\n\n\n<p>Once the pork gets golden slightly, add minced garlic and rock sugar (or white sugar). Fry until the garlic becomes fragrant and the sugar is melted.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/adding-water-to-braised-pork-scaled.jpg\" alt=\"pouring water into a wok with pork and crispy shallots.\" class=\"wp-image-15746\"><\/figure>\n\n\n\n<p>Add the rest of the ingredients: <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">light soy sauce<\/a>, <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">dark soy sauce<\/a>, <a href=\"https:\/\/redhousespice.com\/shaoxing-rice-wine\/\">Shaoxing rice wine<\/a>, five-spice powder, white pepper, diced shiitake mushroom, hard-boiled eggs and fried shallots (I like keeping some to use as a topping when assembling the dish).<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"715\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/cooking-pork-and-eggs-in-wok-1024x715.jpg\" alt=\"hard boiled eggs and braised pork in a wok\" class=\"wp-image-15749\" srcset=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/cooking-pork-and-eggs-in-wok-1024x715.jpg 1024w, https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/cooking-pork-and-eggs-in-wok-400x279.jpg 400w, https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/cooking-pork-and-eggs-in-wok-300x209.jpg 300w, https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/cooking-pork-and-eggs-in-wok-768x536.jpg 768w, https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/cooking-pork-and-eggs-in-wok.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>To add more aroma to the dish, I use the water in which the mushrooms were soaked as the braising liquid. Top up with more water if necessary to fully immerse the meat.<\/p>\n\n\n\n<p>Once it comes to a full boil. Cover with a lid and turn down the heat to low. Leave to simmer for at least 1 hour until the pork becomes very tender and a little gelatinous.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/pork-eggs-in-wok-scaled.jpg\" alt=\"braised pork and eggs in a wok\" class=\"wp-image-15742\"><\/figure>\n\n\n\n<p>&#128718; <strong>Use other cookware<\/strong>. The braising part can be done in a stovetop pressure cooker, an instant pot or a slow cooker. Adjust time accordingly.<\/p>\n\n\n\n<p>&#128718; <strong>Reduce the broth.<\/strong> If there is still a lot of liquid left when the pork is fully cooked, turn the heat to high and boil uncovered to reduce its volume and thicken. However, do not dry it out as it&rsquo;s nice to serve a little thick broth over the rice.<\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h3 class=\"wp-block-heading\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#4d8682\" class=\"has-inline-color\">Step 3: assemble the bowl<\/mark><\/h3>\n\n\n\n<p>While you wait for the pork to cook, prepare another two elements of Lu Rou Fan: steamed rice and blanched green vegetable, such as Bok Choy, Choy Sum, Gai Lan, broccoli, etc.<\/p>\n\n\n\n<p>Blanching vegetables is easy: bring a pot of water, with a little salt, to a full boil then add the vegetable (already washed and chopped). For leafy greens, it only takes 30 seconds or so to cook. Broccoli needs a little longer time. The goal is to cook it but retain its crunchiness. Overcooked vegetables often taste chewy or mushy which isn&rsquo;t very pleasurable.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2021\/05\/Lu-Rou-Fan-pork-rice-bowl-scaled.jpg\" alt=\"A bowl of Lu Rou Fan with crispy shallots on the side\" class=\"wp-image-15736\"><\/figure>\n\n\n\n<p>Put cooked rice into serving bowls then top with the vegetable. Use a knife (or a string) to halve the eggs. Add them and the pork over the rice. Sprinkle some leftover crispy shallots. Here you are! An all-in-one, scrumptious meal is ready to be served.<\/p>\n\n\n\n<p>&#128718; <strong>Make in advance<\/strong>. Since this dish takes some time to cook, I highly recommend you cook a large batch of pork and freeze the leftover for future use. Put into an empty wok (without oil) over medium-high heat. Fry until some fat has been extracted and the meat browns slightly. Stir in garlic and rock sugar. Fry until fragrant and the sugar has melted.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Braise the pork<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-15728-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Add light soy sauce, dark soy sauce, Shaoxing rice wine, five-spice powder, white pepper, diced shiitake mushroom, fried shallots (leave some for topping) and hard-boiled eggs.<\/span><\/div><\/li><li id=\"wprm-recipe-15728-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Pour in the water in which the mushrooms were soaked. Top up with more water to immerse the meat completely.<\/span><\/div><\/li><li id=\"wprm-recipe-15728-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Bring it to a full boil. Turn the heat down to the lowest. Cover with the lid and leave to simmer for at least 1 hour until the pork becomes very tender (check the water level halfway through and top up if it seems too dry). This step can be done in a stovetop pressure cooker or an instant pot. Adjust time accordingly.<\/span><\/div><\/li><li id=\"wprm-recipe-15728-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">If there is still quite a bit of liquid left, turn the heat to high and cook uncovered to reduce its volume and thicken (Do not dry it out though as you&rsquo;d need some liquid to serve with the meat).<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Assemble the dish<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-15728-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Put freshly cooked rice in serving bowls. Top with blanched vegetable and halved eggs. Then spoon the pork, along with some thickened broth, over the rice. Add the rest of the fried shallots. Serve immediately.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Make in advance<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-15728-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Once the pork cools completely, store in an airtight container and keep in the fridge for up to three day or two months in the freezer.<\/span><\/div><\/li><li id=\"wprm-recipe-15728-step-4-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Reheat over low heat (defrost first if frozen) until piping hot.
