In our family kitchen, it&rsquo;s used just as often as <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\" type=\"post\" id=\"958\">soy sauce<\/a>, sometimes even more.<\/p>\n\n\n\n<p>That&rsquo;s why it has always surprised me that Chinese vinegar receives far less attention outside China. While soy sauce can be found in almost every supermarket, Chinese vinegar has only recently become more widely available.<\/p>\n\n\n\n<p>One of the <a href=\"https:\/\/redhousespice.com\/10-must-have-chinese-condiments\/\" type=\"post\" id=\"18859\">most essential seasonings in Chinese cooking<\/a>, Chinese vinegar comes in many forms. Produced in different regions across China, it ranges in color from clear and pale yellow to reddish-brown and deep black. Rice is the most common base ingredient, but other grains such as sorghum, barley, wheat, and peas are also used.<\/p>\n\n\n\n<p>Chinese rice vinegar is generally divided into three main types: black, white, and red. Of these, <strong>black rice vinegar is by far the most widely used<\/strong> in everyday Chinese cooking. It&rsquo;s typically made from glutinous rice along with other grains such as wheat and bran. As a result, most traditional black rice vinegars are<strong> not gluten-free.<\/strong><\/p>\n\n\n\n<p>Different regions of China produce their own styles, including Chinkiang (Zhenjiang) vinegar, Shanxi mature vinegar, and Baoning vinegar. Although each has its own character, they generally share several characteristics:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Deep brown to black color with a fluid consistency<\/li>\n\n\n\n<li>Pronounced acidity with a rich fermented aroma and subtle sweetness<\/li>\n\n\n\n<li>Lightly malty or smoky notes in some varieties<\/li>\n<\/ul>\n<\/div>\n\n\n<div class=\"block-personal-note cwp-inner cwp-large has-background has-quinary-background-color\">\n\n<h2 class=\"wp-block-heading block-personal-note__title has-tertiary-color has-text-color has-link-color wp-elements-cccb4bc2b6ade9d94f30dd078627b95c\" id=\"what-i-use-in-my-kitchen\"><strong>What I use<\/strong> in my kitchen<\/h2>\n\n\n\n<p>If you&rsquo;re buying black rice vinegar for the first time, I recommend looking for <strong><a href=\"https:\/\/geni.us\/RHS-ChinkiangVinegar\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-primary-color\">Chinkiang (Zhenjiang) vinegar<\/mark><\/a>, &#38215;&#27743;&#39321;&#37259;<\/strong>. <\/p>\n\n\n\n<p>It&rsquo;s the most widely available variety outside China and the type most Chinese recipes mean when they call for black rice vinegar. In fact, it&rsquo;s the only black rice vinegar I regularly use and the one you&rsquo;ll find in the vast majority of <a href=\"https:\/\/redhousespice.com\/index\/\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-primary-color\">my recipes<\/mark><\/a>.<\/p>\n\n\n\n<p>Originating from Jiangsu Province, it is produced by several reputable brands, including Gold Plum (&#37329;&#26757;) and Hengshun (&#24658;&#39034;), both of which are reliable choices.<\/p>\n\n<\/div>\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading has-tertiary-color has-text-color has-link-color wp-elements-6fed75a024936696a8dbd0974f6ae719\" id=\"substitutes\"><strong>Substitutes<\/strong><\/h2>\n\n\n\n<p>There is<strong> no true substitute<\/strong> for black rice vinegar. Its distinctive combination of acidity, aroma, and complexity is difficult to replicate with other vinegars.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Balsamic vinegar is sometimes suggested because of its similar dark color, but <strong>I don&rsquo;t recommend using it<\/strong>. It&rsquo;s much sweeter and has a completely different flavor profile.<\/li>\n\n\n\n<li>Chinese white rice vinegar, Japanese rice vinegar, cider vinegar, and other light-colored vinegars can provide acidity, but <strong>they lack the depth and rich fermented aroma<\/strong> that make black rice vinegar unique.<\/li>\n<\/ul>\n\n\n\n<p>If a recipe relies heavily on the flavor of black rice vinegar, the real thing is the only way to achieve the authentic flavor.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 With its clean, sharp acidity, it&rsquo;s commonly used in pickles (such as <a href=\"https:\/\/redhousespice.com\/overnight-pickled-vegetables\/\" type=\"post\" id=\"42249\">Overnight Pickled Vegetables<\/a>), some sweet and sour dishes (such as <a href=\"https:\/\/redhousespice.com\/sweet-sour-fish\/\" type=\"post\" id=\"714\">Sweet and Sour Fish<\/a>), and recipes where you don&rsquo;t want the vinegar to darken the food. Japanese rice vinegar is usually the closest substitute.<\/p>\n\n\n\n<p><strong>Red rice vinegar (&#32418;&#37259;)<\/strong>&nbsp;is less common outside China and rarely used in my recipes. Milder and slightly sweeter than black rice vinegar, it&rsquo;s mainly associated with certain regional cuisines, particularly those of southern China.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading has-tertiary-color has-text-color has-link-color wp-elements-1866e501205c1a522cb08291a4ee1007\" id=\"rice-vinegar-vs-rice-wine\">Rice Vinegar vs. Rice Wine<\/h2>\n\n\n\n<p>Over the years of sharing Chinese recipes, I&rsquo;ve noticed that rice vinegar and rice wine are sometimes confused.
