Today&rsquo;s recipe shows you how it&rsquo;s prepared in the authentic Chinese way. A video tutorial is included.<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Moo-Shu-Pork-scaled.jpg\" alt=\"Moo Shu Pork cooked in the authentic Chinese way\" class=\"wp-image-12219\"><\/figure>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"what-does-original-chinese-moo-shu-pork-look-like\"><span style=\"color: #4d8682;\">What does original Chinese Moo Shu Pork look like?<\/span><\/h2>\n\n\n\n<p>If you&rsquo;re a regular consumer of Moo Shu Pork at Chinese restaurants, takeaways (take-out) outside China, you might find today&rsquo;s recipe a little unexpected. I felt the same way when I saw some of the online recipes of this dish. <\/p>\n\n\n\n<p>The composition of ingredients and the seasoning are so different from the Moo Shu Pork that I enjoyed growing up in China. Food evolves all the time. It&rsquo;s natural that classic dishes pick up new flavours and welcome new ingredients along the way. <\/p>\n\n\n\n<p>I&rsquo;m not here to judge which version of Moo Shu Pork tastes better. But it gives me great pleasure to introduce you to how my dad, like many home cooks in northern China, would present this signature dish of Shandong Cuisine (L&#468; C&agrave;i, &#40065;&#33756;) to his family.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"\"><img decoding=\"async\" class=\"alignnone size-full wp-image-12220\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Chinese-Moo-Shu-Pork-scaled.jpg\" alt=\"Pork fried with egg and vegetables\" width=\"924\" height=\"1385\"><\/h2>\n\n\n\n<p>The name Moo Shu (M&ugrave; X&#299;\/&#26408;&#27176; in Chinese), which originally refers to <a href=\"https:\/\/en.wikipedia.org\/wiki\/Osmanthus_fragrans\" target=\"_blank\" rel=\"noopener noreferrer\">sweet osmanthus<\/a>, is used to describe small pieces of scrambled egg as they resemble the tiny yellow flowers of sweet osmanthus trees.<\/p>\n\n\n\n<p>So obviously, the two main ingredients of Moo Shu Pork have to be egg and pork. Wood ear mushroom, lily buds and cucumber are added for extra colour, flavour, texture and nutrition.&nbsp;<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"ingredients\"><span style=\"color: #4d8682;\">Ingredients<\/span><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><img decoding=\"async\" width=\"924\" height=\"1386\" class=\"alignnone size-full wp-image-12217\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Ingredients-for-Moo-Shu-Pork-scaled.jpg\" alt=\"Ingredients for making Moo Shu Pork\"><\/h3>\n\n\n\n<h3 class=\"wp-block-heading\">Pork&nbsp;<\/h3>\n\n\n\n<p>Unlike many Chinese stir-fried meat dishes, such as <a href=\"https:\/\/redhousespice.com\/black-pepper-beef-stir-fry\/\">Black Pepper Beef<\/a>, the pork in authentic Moo Shu Pork usually isn&rsquo;t marinated (I just mix it with a little Shaoxing rice wine). So tender cuts of pork are recommended.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p>I use pork tenderloin and cut it into slices. If it&rsquo;s challenging for you to cut it thin, I suggest you put the pork piece in the freezer for 1-2 hours until semi-frozen. Then you&rsquo;ll find it much easier to slice.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/cutting-pork-slices-scaled.jpg\" alt=\"Slicing pork into thin pieces\" class=\"wp-image-12227\"><\/figure>\n\n\n\n<p>If you&rsquo;re using other cuts of pork, it&rsquo;s better to marinate it with a mixture of water and starch to tenderise, just like how I do it for <a href=\"https:\/\/redhousespice.com\/sichuan-shredded-pork-garlic-sauce\/\">Shredded Pork with Garlic Sauce<\/a>.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\"><span style=\"color: #000000;\">Egg<\/span><\/h3>\n\n\n\n<p>I was very surprised to discover that there isn&rsquo;t any egg in some American-style Moo Shu Pork . As I explained earlier, egg is essential to the original version of this dish. It&rsquo;s just as important as the pork. For two servings, you may use either 3 small\/medium-sized eggs or 2 large ones.&nbsp;<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\"><span style=\"color: #000000;\">Wood ear mushroom<\/span><\/h3>\n\n\n\n<p>The traditional recipe also calls for <a href=\"https:\/\/redhousespice.com\/wood-ear-mushroom-salad\/\">wood ear mushroom<\/a> and lily buds, two ingredients that usually come in dried form. Perhaps unfamiliar to many, they are in fact common pantry items in Chinese households. For example, you can find both of them in the famous <a href=\"https:\/\/redhousespice.com\/hot-sour-soup\/\">Hot &amp; Sour Soup<\/a>.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/wood-ear-mushroom-scaled.jpg\" alt=\"Dried and rehydrated wood ear mushroom\" class=\"wp-image-12231\"><\/figure>\n\n\n\n<p>Known as Mu Er\/&#26408;&#32819; in Chinese, wood ear mushroom is a type of edible fungus which grows on tree trunks and resembles ears in shape. Although it doesn&rsquo;t have a strong taste, its crunchy texture is much appreciated. You can find it in Chinese stores on the shelves for dried ingredients.<\/p>\n\n\n\n<p>Before cooking, you need to soak it in warm water for about 10 minutes until it returns to its original size (much bigger then dried ones). Then give it a quick rinse and tear it into smaller pieces if necessary.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\"><span style=\"color: #000000;\">Lily buds<\/span><\/h3>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/lily-buds-scaled.jpg\" alt=\"Dried and rehydrated lily buds\" class=\"wp-image-12230\"><\/figure>\n\n\n\n<p>Lily buds, named Huang Hua\/&#40644;&#33457; in Chinese, are unopened flowers of the daylily plant. Dried lily buds resemble straws, have a brownish colour and a woody, earthy taste. It&rsquo;s used in classic dishes like <a href=\"https:\/\/redhousespice.com\/hot-sour-glass-noodle-soup\/\">Hot and Sour Soup<\/a>.<\/p>\n\n\n\n<p>R<span data-slate-fragment=\"JTVCJTdCJTIydHlwZSUyMiUzQSUyMnBhcmFncmFwaCUyMiUyQyUyMmNoaWxkcmVuJTIyJTNBJTVCJTdCJTIydGV4dCUyMiUzQSUyMnJlaHlkcmF0ZWQlMjIlN0QlNUQlN0QlNUQ=\">ehydrate<\/span>&nbsp;them in warm water for 30 minutes until they become soft and lighter in colour. If you have difficulty sourcing it, use bamboo shoots as a substitute or skip it altogether.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Use cucumber or another vegetable<\/h3>\n\n\n\n<p>For fresh vegetables in this dish, cucumber is the most common choice. Have you tasted cooked cucumber (the flavour changes after cooking)? If not, give it a try! Other vegetables, such as spinach, carrot, pak choy, or celtuce, are good substitutes.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Cutting-cucumber-scaled.jpg\" alt=\"Slicing cucumber\" class=\"wp-image-12226\"><\/figure>\n\n\n\n<p>You may slice the cucumber any way you wish, or try my method: cut it diagonally into chunks. Then slice the chunk (cut-side down) into thin pieces.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Keep the seasoning light &amp; simple<\/h3>\n\n\n\n<p>The seasoning for original Moo Shu Pork is incredibly simple: <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\">light soy sauce<\/a>, salt and a pinch of white pepper. That&rsquo;s all! The simplicity helps you to appreciate the natural, individual taste of the main ingredients. That&rsquo;s one of the reasons why I enjoy this dish so much.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"-2\"><img decoding=\"async\" class=\"alignnone size-full wp-image-12218\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Authentic-Moo-Shu-Pork-Recipe-scaled.jpg\" alt=\"Chopsticks picking up a piece of pork from a plate of Moo Shu Pork\" width=\"1707\" height=\"2560\"><\/h2>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"cooking-process\"><span style=\"color: #4d8682;\">Cooking process<\/span><\/h2>\n\n\n\n<p>Moo Shu Pork is a very simple stir-fry dish to make. To achieve the optimal result both in taste and texture, you need to follow an important rule: cook egg, pork and vegetables separately then combine everything in the end. Here is how I cook it step by step (a tutorial video is included in the recipe card below):<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Step 1: Scramble the egg<\/h3>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Cooking-scrambled-egg-scaled.jpg\" alt=\"Making scrambled egg in a wok\" class=\"wp-image-12225\"><\/figure>\n\n\n\n<p>The&nbsp;cooking method is the same as what applies to the classic Chinese <a href=\"https:\/\/redhousespice.com\/tomato-egg-stir-fry\/\">Tomato &amp; Egg Stir-fry<\/a> and <a href=\"https:\/\/redhousespice.com\/singapore-mei-fun\/\">Singapore Rice Noodles<\/a>. Heat oil over high heat until it starts to smoke. Pour in the lightly beaten egg.<\/p>\n\n\n\n<p>You&rsquo;ll see the edge quickly bubbles up. Push to one side of the wok to let the uncooked egg flow to the centre. Then break the cooked egg into bite-sized pieces with a spatula. Transfer out for later use.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Step 2: Fry the pork<\/h3>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Frying-pork-slices-scaled.jpg\" alt=\"Frying pork slices in a wok\" class=\"wp-image-12229\"><\/figure>\n\n\n\n<p>The key to tender pork is to keep the frying process as brief as possible. After frying the egg, the wok is already hot. So you can add the pork right after you pour in the oil. Stir and separate the pork slices using a spatula (or a pair of chopsticks). As soon as it turns pale, transfer to the egg plate.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Step 3: Cook the vegetables<\/h3>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"1478\" height=\"924\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/frying-cucumber-mushroom.jpg\" alt=\"frying cucumber, wood ear mushroom and lily buds\" class=\"wp-image-12232\" srcset=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/frying-cucumber-mushroom.jpg 1478w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/frying-cucumber-mushroom-400x250.jpg 400w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/frying-cucumber-mushroom-300x188.jpg 300w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/frying-cucumber-mushroom-1024x640.jpg 1024w, https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/frying-cucumber-mushroom-768x480.jpg 768w\" sizes=\"(max-width: 1478px) 100vw, 1478px\" \/><\/figure>\n\n\n\n<p>Fry scallions and ginger in a little oil to bring out their aroma. Add wood ear mushroom and lily buds. Fry for about 30 seconds. Then stir in sliced cucumber. It doesn&rsquo;t take long to cook cucumber. Once you notice it begins to wilt, move onto the next step.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">Step 4: Combine everything<\/h3>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/10\/Frying-moo-shu-pork-in-wok-scaled.jpg\" alt=\"Cooking Moo Shu Pork in a wok\" class=\"wp-image-12228\"><\/figure>\n\n\n\n<p>Add the cooked egg and pork. Season with light soy sauce, salt and white pepper. Mix well to warm up the egg, pork and evenly distribute the seasonings. Dish out then serve immediately.&nbsp;<\/p>\n\n\n\n<p>Usually, Moo Shu Pork is served with rice, along with other savoury dishes. Pour in the egg. When the edge is cooked, push to one side to let the uncooked part flow to the centre of the wok. Break the cooked egg into bite-sized pieces with a spatula. Transfer to a plate.<\/span><\/div><\/li><li id=\"wprm-recipe-12198-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Add another 1 tbsp of oil to the wok. Stir fry the pork. Transfer to the egg plate as soon as it turns pale (do not overcook).<\/span><\/div><\/li><li id=\"wprm-recipe-12198-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Pour the remaining 1\/2 tbsp of oil into the wok. Fry scallions and ginger for 20 sec or so then add wood ear and lily buds. Stir fry for 30 sec then put in cucumber.<\/span><\/div><\/li><li id=\"wprm-recipe-12198-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Once the cucumber begins to wilt, add the egg and pork. Season with light soy sauce, salt and white pepper. Stir fry for 10 more sec then dish out. Serve immediately.<\/span><\/div><\/li><\/ul><\/div><\/div>\n\t<div id=\"recipe-12198-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-none wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\">1. Pork tenderloin is recommended for its tenderness. However, you could use other cuts too. In this case, I suggest you marinate it with a mixture of water and starch to tenderise, just like how I do it for <a href=\"https:\/\/redhousespice.com\/sichuan-shredded-pork-garlic-sauce\/\">Shredded Pork with Garlic Sauce<\/a>.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">2. Wood ear mushroom (Mu Er\/&#26408;&#32819;) comes in dried form and needs to be soaked to return to its original size. Place it in plenty of warm water for 10 mins (they expand quite a lot).&nbsp;<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">3. Lily buds (Huang Hua\/&#40644;&#33457;) are also sold in dried form.
