After steaming, they look semi-transparent. However, steamed dumplings do have some advantages over boiled or pan-fried ones.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>The cooking time is short and stress-free. You can just set a timer and relax. No need to stand beside the cooker.<\/li>\n\n\n\n<li>The shape of the dumplings is well maintained during cooking.<\/li>\n\n\n\n<li>A little leakage or imperfection won&rsquo;t cause big problems so it&rsquo;s novice-friendly.<\/li>\n\n\n\n<li>You can use starch to make semi-transparent crystal dumplings which are visually appealing and can be gluten-free (if you use gluten-free wheat starch).<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"how-to-make-steamed-dumpling-dough\"><span style=\"color: #4d8682;\">How to make steamed dumpling dough<\/span><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">The flour-based dough<\/h3>\n\n\n\n<h3 class=\"wp-block-heading\"><img decoding=\"async\" class=\"alignnone size-full wp-image-11559\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/09\/Steamed-Dumplings-16-scaled.jpg\" alt=\"dumplings in a steamer basket\" width=\"1707\" height=\"2560\"><\/h3>\n\n\n\n<p>To make 24 regular dumplings (with non-transparent skin), you will need:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>230g all-purpose flour\/plain flour<\/li>\n\n\n\n<li>100g boiling water<\/li>\n\n\n\n<li>30g room temperature water<\/li>\n<\/ul>\n\n\n\n<p>If you&rsquo;ve read my post &ldquo;<a href=\"https:\/\/redhousespice.com\/homemade-dumpling-wrappers\/\">Homemade Dumpling Wrappers<\/a>&rdquo;, you probably have noticed that this ingredient list is a little different. Instead of using just room temperature water, I made a &ldquo;hot water dough&rdquo; which produces a softer, less chewy texture after cooking. Also, it&rsquo;s much easier to knead and roll (An ideal start for the dumpling novice).<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Firstly, pour boiling water over the flour while mixing with chopsticks.<\/li>\n\n\n\n<li>Then add the room temperature water. Stir until no more liquid can be seen.<\/li>\n\n\n\n<li>Combine and knead the dough with your hands until it becomes smooth.<\/li>\n\n\n\n<li>Cover the bowl then rest for 30 minutes.<\/li>\n<\/ol>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">The starch-based dough<\/h3>\n\n\n\n<h3 class=\"wp-block-heading\"><img decoding=\"async\" class=\"alignnone size-full wp-image-11560\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/09\/Steamed-Dumplings-18-scaled.jpg\" alt=\"Crystal dumplings in a steamer basket\" width=\"1708\" height=\"2560\"><\/h3>\n\n\n\n<p>To make 24 crystal dumplings (with semi-transparent skin), you will need:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100g wheat starch (&#28548;&#31881;)<\/li>\n\n\n\n<li>70g tapioca starch\/cornstarch<\/li>\n\n\n\n<li>170g boiling water<\/li>\n\n\n\n<li>2 tsp cooking oil<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/redhousespice.com\/wp-content\/uploads\/2020\/09\/Steamed-Dumplings-6-scaled.jpg\" alt=\"A bag of tapioca starch &amp; a bag of wheat starch\" class=\"wp-image-11551\"><\/figure>\n\n\n\n<p>For the starch-based dough, there is <strong>one rule you must follow: the water has to be just boiled<\/strong>. Otherwise, your dough won&rsquo;t be as elastic thus become difficult to shape. The worst case happens when the water temperature is too low: you&rsquo;ll end up with a sloppy, sticky mass or just a bowl of starchy water (don&rsquo;t ask me how I figured this out!).<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<p>Here is how I make the dough step by step:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Mix wheat starch and tapioca starch (or cornstarch) in a bowl then place it on a kitchen scale.<\/li>\n\n\n\n<li>Boil water (more than the quantity suggested in the recipe as you need to consider evaporation) in a kettle or a pot. Once fully boiled, pour the suggested quantity over the starch straight away (without transferring it to a measuring cup as it will result in temperature drop).<\/li>\n\n\n\n<li>Stir with chopsticks immediately to distribute the water evenly. <span data-slate-fragment=\"JTVCJTdCJTIydHlwZSUyMiUzQSUyMnBhcmFncmFwaCUyMiUyQyUyMmNoaWxkcmVuJTIyJTNBJTVCJTdCJTIydGV4dCUyMiUzQSUyMlRoZW4lMjBhZGQlMjB0aGUlMjBvaWwuJTIwQ29tYmluZSUyMGFuZCUyMGtuZWFkJTIwd2l0aCUyMHlvdXIlMjBoYW5kJTIwdW50aWwlMjB2ZXJ5JTIwc21vb3RoLiUyMiU3RCU1RCU3RCU1RA==\">Then add the oil.<\/span><\/li>\n\n\n\n<li><span data-slate-fragment=\"JTVCJTdCJTIydHlwZSUyMiUzQSUyMnBhcmFncmFwaCUyMiUyQyUyMmNoaWxkcmVuJTIyJTNBJTVCJTdCJTIydGV4dCUyMiUzQSUyMlRoZW4lMjBhZGQlMjB0aGUlMjBvaWwuJTIwQ29tYmluZSUyMGFuZCUyMGtuZWFkJTIwd2l0aCUyMHlvdXIlMjBoYW5kJTIwdW50aWwlMjB2ZXJ5JTIwc21vb3RoLiUyMiU3RCU1RCU3RCU1RA==\">Combine and knead with your hands until smooth and elastic.<\/span><\/li>\n<\/ol>\n\n\n\n<p><strong>No resting is required for this type of dough<\/strong>. You can start assembling right away. Cover the dough very well if you haven&rsquo;t prepared the filling. Do not leave it too long though. Otherwise, its texture will change thus won&rsquo;t be workable.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h3 class=\"wp-block-heading\">FAQ<\/h3>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1656148756008\"><strong class=\"schema-faq-question\"><strong>Q: Can I use a stand mixer to make the dough?<\/strong><\/strong> <p class=\"schema-faq-answer\"><strong>A:<\/strong> Yes, you can, particularly when making a bigger batch. However, I don&rsquo;t think it&rsquo;s necessary for making crystal dumpling dough. It&rsquo;s much easier to combine and knead this type of dough than flour-based dough.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1656148778241\"><strong class=\"schema-faq-question\"><strong>Q: For crystal dumpling dough, can I replace wheat starch with other types of starch?<\/strong><\/strong> <p class=\"schema-faq-answer\"><strong>A:<\/strong> Not really. Wheat starch is the key ingredient for this type of dumplings. You should be able to get it in Chinese\/Asian stores, as well as online shopping platforms like Amazon.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1656148804186\"><strong class=\"schema-faq-question\"><strong>Q: Is the dumpling dough made with starch gluten-free?<\/strong><\/strong> <p class=\"schema-faq-answer\"><strong>A:<\/strong> Strictly speaking, it&rsquo;s not 100 % gluten-free as the wheat starch contains a small amount of gluten (even after the process of removing gluten). I believe this is the case with Chinese branded ones. However, wheat starch specially labelled as &ldquo;gluten-free\/codex&rdquo; is safe to use for coeliacs (Read <a href=\"https:\/\/www.theglutenfreeblogger.com\/what-is-gluten-free-wheat-starch-and-is-it-safe-for-coeliacs\/\" target=\"_blank\" rel=\"noreferrer noopener\">this<\/a> for more).<\/p> <\/div> <\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"how-to-roll-the-wrappers\"><span style=\"color: #4d8682;\">How to roll the wrappers<\/span><\/h2>\n\n\n\n<p>Is rolling the wrappers the most intimidating part for you? I can relate to that feeling. I thought I&rsquo;d never master this skill when I was a child watching my dad&rsquo;s hands &ldquo;flying&rdquo; with a rolling pin. But I did. Start at a slow pace and keep practising. It won&rsquo;t take you very long to become very efficient at this. The other hand turns the wrapper a little each time in a circular motion (The video in the recipe card below clearly demonstrates the process). Press while moving the cleaver side to side until the desired thickness is achieved. If the dough sticks a little, coat the cleaver (and the work surface) with a thin layer of oil.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">FAQ<\/h3>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1656148846099\"><strong class=\"schema-faq-question\"><strong>Q: My wrappers crack on the edge while rolling. Why?<\/strong><\/strong> <p class=\"schema-faq-answer\"><strong>A:<\/strong> This can happen to crystal wrappers when the dough is too dry. You can fix it by wetting your hand with water then kneading the moisture into the dough. Also, remember to cover the unused dough at all times.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1656148883561\"><strong class=\"schema-faq-question\"><strong>Q:<\/strong> <strong>Can I use shop-bought wrappers for this recipe?<\/strong><\/strong> <p class=\"schema-faq-answer\"><strong>A:<\/strong> Yes, you can. Flour-based regular wrappers are easily accessible in Chinese shops. However, starch-based crystal wrappers aren&rsquo;t commercially available.<\/p> <\/div> <\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"how-to-make-a-delicious-filling\"><span style=\"color: #4d8682;\">How to make a delicious filling<\/span><\/h2>\n\n\n\n<p>Once you understand a few basic principles, it&rsquo;s very easy to come up with a delicious dumpling filling by mixing and matching your favourite ingredients. Basically, what you need to do is to put the dumplings into a steamer basket then leaving them to steam until the moment when they are ready to be served. No hassle, right? Still, I&rsquo;d like to offer a few tips to help you achieve a great result.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">How to avoid sticking<\/h3>\n\n\n\n<p>No matter what type of steamer you use, you should always remember to place a lining between the dumplings and the steamer basket to avoid sticking (Nothing is worse than having all your dumplings stuck there). My favourite choice is slices of carrot. They work perfectly for the purpose. Also, they add a lovely colour to the dish, as well as some extra nutrition. Please resist the urge to open the lid to peek during steaming. First of all, it&rsquo;s unnecessary (your dumplings can&rsquo;t run away, I promise). It&rsquo;s such a satisfying moment! But, don&rsquo;t rush to pick them up straight away. Leave them in the basket for a minute or so as they tend to be a little sticky. This is particularly important when handling crystal dumplings. Otherwise, they might tear when sticking to chopsticks.<\/p>\n\n\n\n<p>That said, do not let them cool too much either. It&rsquo;s best to have steamed dumplings when warm. Consume them within 2 days. There are two ways to reheat:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Steam for 3-4 minutes.<\/li>\n\n\n\n<li>Pan fry over low heat with a little oil. If you wish to make a batch in advance, lay them in a single layer on a tray (lined with parchment paper) right after they&rsquo;re assembled. Freeze until completely frozen. Then transfer to an airtight container\/plastic bag. Pour boiling water over (It has to be just boiled). Stir with chopsticks immediately to distribute the water evenly. Then add oil. Combine and knead with your hands until very smooth. It can be used straight away. Remember to cover it well while preparing the filling.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Mix the filling<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11612-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Put minced pork into a mixing bowl. Add white pepper, salt, sesame oil &amp; water. Stir to combine.<\/span><\/div><\/li><li id=\"wprm-recipe-11612-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Add Chinese chives, water chestnut &amp; dried papery shrimp. Mix well then keep in the fridge until you&rsquo;re ready to assemble the dumplings.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Roll the wrappers<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11612-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Divide the dough into two parts. Roll each part into a rope then cut into 12 equal sections (24 pieces in total).<\/span><\/div><\/li><li id=\"wprm-recipe-11612-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Use a rolling pin to flatten a piece into a thin disc, about 9-10cm in diameter (Please refer to the tutorial below). Dust with flour\/starch if it sticks. Remember to cover the unused pieces to prevent them from drying out.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Assemble the dumplings<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11612-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Place a spoonful of filling on the wrapper. Fold and seal completely. You may use parchment paper or coat the steamer with a thin layer of oil).<\/span><\/div><\/li><li id=\"wprm-recipe-11612-step-4-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Bring the water to a full boil, then place the basket in and cover with a lid.<\/span><\/div><\/li><li id=\"wprm-recipe-11612-step-4-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Steam over medium heat for 10 minutes for the regular dumplings, or 6 minutes for the crystal dumplings.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Serve the dumplings<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11612-step-5-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">It&rsquo;s best to enjoy steamed dumplings when warm.<\/span><\/div><\/li><li id=\"wprm-recipe-11612-step-5-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">You can serve them on their own, with a simple mix of <a href=\"https:\/\/redhousespice.com\/chinese-chilli-oil\/\">homemade chilli oil<\/a> &amp; <a href=\"https:\/\/redhousespice.com\/chinese-rice-vinegar\/\">black rice vinegar<\/a> or with other delcious sauces found in my post \"<a href=\"https:\/\/redhousespice.com\/dumpling-sauces\/\">Six Dumpling Sauces<\/a>\".<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Reheat leftovers<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11612-step-6-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Keep the leftover cooked dumplings in an airtight container in the fridge for up to 2 days. To reheat, you may either steam for 3-4 minutes or pan fry over low heat with a little oil until piping hot.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Make-ahead &amp; freeze<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11612-step-7-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Right after the dumplings are assembled, lay them in a single layer on a tray. Freeze until completely frozen. Transfer to an airtight container\/plastic bag. Store in the freezer for up to 2 months.<\/span><\/div><\/li><li id=\"wprm-recipe-11612-step-7-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Cook frozen dumplings: Do not defrost. Steam for 15 mins or so.<\/span><\/div><\/li><\/ul><\/div><\/div>\n\t<div id=\"recipe-11612-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-none wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\">1. The flour-water ratio may vary a little depending on the brand of the flour. Adjust if necessary. The dough should be medium soft and not sticky.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">2. <strong>The water for crystal dumpling dough has to be just boiled<\/strong>. If it&rsquo;s at a lower temperature, the dough consistency will change a lot.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">3.
