Made from fermented glutinous rice and named after the city of Shaoxing in Zhejiang Province, it has been used in Chinese kitchens for centuries.<\/p>\n\n\n\n<p>It belongs to the broader category of Chinese rice wines (&#31859;&#37202;, mijiu) and is one of the best-known types of Chinese yellow wine (&#40644;&#37202;, huangjiu). Its amber color and complex flavor set it apart from many lighter-colored, milder rice wines.<\/p>\n\n\n\n<p>A splash of Shaoxing wine can add subtle aroma and depth to a dish. While it&rsquo;s a staple in many savory recipes, its role is mostly supportive rather than dominant. Like many Chinese home cooks, I mainly use it as part of a flavor-building process,&nbsp;alongside ingredients such as <a href=\"https:\/\/redhousespice.com\/soy-sauce\/\" type=\"post\" id=\"958\">soy sauce<\/a>, oyster sauce, ginger, scallions, and spices.<\/p>\n\n\n\n<p>It&rsquo;s commonly used in stir-fries, braises, stews and meat-based fillings for <a href=\"https:\/\/redhousespice.com\/dumpling-guide\/\" type=\"post\" id=\"4950\">dumplings<\/a><a href=\"http:\/\/Chinese%20dumpling\"><\/a>and <a href=\"https:\/\/redhousespice.com\/pork-wonton-soup\/\">wontons<\/a>. It&rsquo;s particularly popular in dishes starring meat, poultry, or fish, as it&rsquo;s traditionally believed to help reduce unwanted meaty or fishy odors.<\/p>\n\n\n\n<p>You can add Shaoxing wine to marinades before cooking or mix it with other seasonings to make a sauce. In these situations, a teaspoon or two, or occasionally a tablespoon, is usually enough.<\/p>\n\n\n\n<p>There are also a few classic dishes that use Shaoxing wine much more generously. Examples include appetizers such as <a href=\"https:\/\/redhousespice.com\/drunken-chicken\/\" type=\"post\" id=\"16258\">Drunken Chicken<\/a> and braised dishes like <a href=\"https:\/\/redhousespice.com\/red-cooked-pork-belly\/\" type=\"post\" id=\"1042\">Red-Cooked Pork Belly<\/a> and <a href=\"https:\/\/redhousespice.com\/three-cup-chicken\/\" type=\"post\" id=\"1815\">Three Cup Chicken<\/a>. In these recipes, the flavor of the wine becomes much more noticeable.<\/p>\n<\/div>\n\n\n<div class=\"block-personal-note cwp-inner cwp-large has-background has-quinary-background-color\">\n\n<h2 class=\"wp-block-heading block-personal-note__title has-tertiary-color has-text-color has-link-color wp-elements-6a81208930c0820beba22913140bc261\" id=\"my-buying-tip-check-the-salt-content\"><strong>My Buying Tip: Check the Salt Content<\/strong><\/h2>\n\n\n\n<p>When buying Shaoxing rice wine, I pay much more attention to the salt content than the brand. That&rsquo;s a significant difference.<\/p>\n\n\n\n<p>I&rsquo;ve noticed that products sold in North America are more likely to be labelled <strong>&ldquo;Shaoxing Cooking Wine&rdquo;<\/strong> and contain added salt. From what I&rsquo;ve read, this allows them to be sold as a cooking ingredient rather than an alcoholic product.<\/p>\n\n\n\n<p>My advice is simple: <strong>check the nutrition label and choose a low-sodium product whenever possible.<\/strong> You may also come across Huadiao wine (&#33457;&#38613;&#37202;), a premium variety of Shaoxing wine that is often low in salt.<\/p>\n\n\n\n<p>If a recipe calls for only a small amount of Shaoxing wine, a higher-sodium product is usually workable. You can also leave it out altogether. Personally, I wouldn&rsquo;t buy a bottle of high-sodium cooking wine just for recipes that use a small amount.<\/p>\n\n<\/div>\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading has-tertiary-color has-text-color has-link-color wp-elements-b2844d412c4b92840d92c02fabee8cbe\" id=\"substitution\">Substitution<\/h2>\n\n\n\n<p>When a recipe calls for only a small amount of Shaoxing wine, I usually suggest leaving it out rather than buying a bottle specifically for that recipe.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>If you&rsquo;d prefer a substitute, dry sherry is generally considered a good match.<\/li>\n\n\n\n<li>For dishes that rely heavily on the flavor of Shaoxing wine, such as <a href=\"https:\/\/redhousespice.com\/drunken-chicken\/\" type=\"post\" id=\"16258\">Drunken Chicken<\/a>, there is no true substitute.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-tertiary-color has-text-color has-link-color wp-elements-4f59fecedc14f8d64d01cc5b55c24cd0\" id=\"faqs\">FAQs<\/h2>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1781279164779\"><strong class=\"schema-faq-question\"><strong>Q: Is Shaoxing rice wine the same as, or similar to, rice vinegar?<\/strong><\/strong> <p class=\"schema-faq-answer\">No. Shaoxing rice wine is an alcoholic product that can be used in cooking, while <a href=\"https:\/\/redhousespice.com\/chinese-rice-vinegar\/\" type=\"post\" id=\"1276\">rice vinegar<\/a> is a sour, acidic seasoning. They have completely different flavors and uses, and should not be used interchangeably.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1781279331417\"><strong class=\"schema-faq-question\">Q: I<strong>s it gluten-free?<\/strong><\/strong> <p class=\"schema-faq-answer\">No. Although it&rsquo;s made primarily from glutinous rice, most Shaoxing rice wine also contains wheat.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1781279362937\"><strong class=\"schema-faq-question\">Q: <strong>Does it need refrigeration?<\/strong><\/strong> <p class=\"schema-faq-answer\">No. Once opened, keep it tightly sealed in a cool, dark place.
