Made this tonight and I only used one tablespoon of the pickled peppers on consideration of my wife’s tastes. It had just a little heat and the pickled taste was a little different. I did add more garlic to make up for the smaller amount of peppers. I was able to secure the actual Sichuan-style pickled chili peppers through the Mala Market. Altogether, a very nice supper. Next on the agenda is hot and sour soup. Yum.

Hi Wei, Thanks for sharing your recipes. I cooked the Sichuan Pork with Garlic Sauce this evening for my family. I had all the ingredients apart from the wood ear mushrooms which I managed to get from our local Chinese supermarket. My daughter who doesn’t like mushrooms usually, really enjoyed these as she said they were crunchy rather than soft and squidgy! The dish was really tasty and easy to prepare and I served it with jasmine rice as we prefer that to long grain. The hard part now is knowing what recipe to try next, there are so many tasty sounding ones on your website.

I saw that someone else had asked if sambal oelek could be substituted for the pickled chili, which is good news since I have a big jar of that already. My question is, can it be substituted 1:1, or is one of those sauces hotter than the other? Should I add something else to get the same flavour as when using the Sichuan pickled chili?
