I forgot to mention in my comments that I tried freezing some biang biang noodles. I cooked them for 1 minutes, put them in cold water to stop the cooking. I put a little oil on them to keep them from sticking and then froze them for later. Later, I thawed them, put them back in boiling water for a few minutes, and then served them. Almost as good as fresh.

I have amazed my Chinese friends (I’m not Chinese), especially those from Xi’an by making the noodles. They have told me they are as good or better than what they had in China! This recipe does NOT use eggs as another recipe indicated. They do not stretch as nicely as this recipe from Wei. It really was not difficult to make and is a big hit. I have used traditional sauces, however I once tried using the noodles with meatballs and marinara sauce. I call it “East Meets West”!! It was fantastic. What nice is that you can make these biang biang just before serving and guests will love watching you make them.
