I only had basic American non-conforming cucumbers (but very fresh from farmers market) and was worried they would not have enough crunch after sitting a day or two, but they were only better on day 2 & 3 after marinating and still plenty crunchy YUM. The freshness of the cuc's is a big factor I think, I'm going to keep an eye out for the Chinese cucumbers at my Asian market.]]> 5 stars
