If you divide the mixture among individual bowls, the steaming time should remain about the same. If you steam all 6 eggs together, I recommend using a wide, shallow dish rather than a deep bowl so the mixture isn’t too thick. In that case, increase the steaming time to around 15 minutes, or until the center is just set.

Glad you enjoyed it, Sarah! The extra water is usually from condensation dripping into the bowl during steaming, rather than the mixture itself. Did you cover the bowl with cling film? That helps prevent it.

I just made this, it was really yummy
I used sou sause and Chili crisp on top. I followed the recipe exactly, and the eggs set, but there was excess water in the bowl that seeped out of the egg mixture. Maybe a little less water next time?

I Diane. I saw your comment about not realizing how good asparagus would taste with eggs and I just wanted to share something. I used to work in a market research company and they had a kitchen to prepare and serve meals to their clients. They served an egg salad sandwich on white bread with the crust cut off and then they added blanched asparagus tips to it and it’s absolutely delicious. I too, when I first tasted that recipe, couldn’t believe how good asparagus and eggs tasted together.
