I didn’t have time to hunt down star anise, which is one of the few spices I don’t typically keep in the house. The one Chinese grocery I went to didn’t have any, so I substituted Chinese five spice powder. I had to sort of guess as to the proportion, but it worked really well. Perhaps a little too Christmasy overall, but the end result was still good.

Ordinarily, when I follow a “simplified“ recipe, the end result is not entirely satisfactory, but in this case, I really can say that it was easy and it delivered. I didn’t even really follow the recipe, since all of my quantities were both in US measurements and different. I eyeballed and ballparked everything and the results were pretty good. It didn’t get quite as caramelized as I thought it might, but that’s the only consideration, and I think a lot of that had to do with the weight of my pot. I was using a high-quality Dansk enamel, cast-iron pot, but it is thin. Le Creuset would probably be better for this dish.
