I use fresh alkaline noodles for this dish, but if they’re unavailable, dried noodles work very well too. I’d suggest about 80–100 g of dried noodles per portion. Happy cooking!

Thank you for your time and for sharing your wonderful recipes with the world. So many of your dishes are now family favorites, I think my husband thanks you even more.

I do not mean to be a bother, but I have a question regarding your noodle substitution note. You recommended using dried ramen noodles in place of the fresh alkaline noodles. Is there a suggested weight conversion for using dried noodles rather than the 2 portions of alkaline noodles?

Any help would be truly appreciated, and no worries if you are too busy to answer, just as long as you are having a marvelous life.

This recipe is absolutely perfect! 热干面 is one of my favorite simple dishes and is the reason why I always have 酸豇豆 in the house.
A place I used to go used chicken stock as a secret ingredient, and you could get the sauce on 饺子 as well. I’m definitely going to have to do that again!
