Yes, it sounds like those bao are a bit too dry and not well seasoned. You might like my steamed bao recipe, which has a moist and flavorful filling. My dumpling filling guide could be helpful too!

But am confounded by the bao fillings here in Perth Australia, they always seem to be filled with a meatball, rather than a moist and flavoursome filling. Any thoughts?
