Thank you for sharing your experience. I’m glad it worked well for you. As for soy milk, no, it won’t work for this recipe. The setting reaction relies on proteins in dairy milk, so soy milk won’t form the same delicate curd.

Today I tried to make it at home following your recipe, and it turned out perfect on the first try! Only detail that I did, I poured in the milk from like 6-7 inches. Also, my ramekins didn’t hold 200ml milk, so it was more like 150ml gor 1 tablespoon of ginger juice.

Tried this last night, with approximate measurements (had a cup of 2% milk that needed using) and it worked great. I microwaved the milk (30 seconds and it was 78C), dissolved in the sugar then added ~1Tbsp fresh ginger juice into the milk (just microplaned a knob of ginger and pressed through a small sieve), a quick stir and 10 min later, a delicious, very soft and delicate curd that packed a gingery punch. Thanks!

PS I like it better cold too. Does this work with other milks like soy milk?

Hi Hanna! I haven’t tested frozen ginger cubes, but they may be less reliable. Ginger milk curd depends on active enzymes in fresh ginger, and freezing can weaken them. Fresh ginger usually gives more consistent results.

Thanks for trying my recipe and I’m sorry it didn’t set, James. If the temperature and ratios are correct, the ginger is usually the key. Older or less fresh ginger may not have enough active enzymes, so try very fresh ginger. I’ve also tested this recipe with fresh milk. Sterilized milk can have altered protein structure from higher heat treatment, which may make setting less reliable.
