Excellent- nothing like a pimped up congee to start the day; especially on a cool morning!
As a person from Denmark and married to a Japanese ( and living in Japan)I was ( OF COURSE!) introduced to congee early on.
It’s strange how many westerners
won’t try congee on their Asian travels especially if noodles are available.
Congee is a blank canvas.

I just read your comment on congee. Gave me a couple good ideas, especially the ginger addition. Since ginger is a warm spice, I wonder if perhaps a teaspoon of sugar or honey might work. Gotta try it!

This is about as basic a food as you can get: that’s why it’s noted for being a “comfort” food. Because of its simply texture, I’ve added all SORTS of stuff. It’s great for reducing leftovers from the fridge. Just an interesting note: Southern American “grits” can produce the same texture, but with a corn flavor.

I researched this recipe when recovering from a long illness and decided to give this version a go as your website is my go-to for all Chinese recipes! I absolutely love this version – I make a big batch and eat it for breakfast every day (and sometimes dinner as well!)
I boil the rice in chicken bone broth then in the last 5 minutes of simmering add a few chunks of ginger (which I remove before serving), salt and pepper, a tablespoon of minced garlic and a dash of rice vinegar. Great recipe, especially for winter. I love everything I’ve ever tried from this website — thank you so much for all your hard work!!
