Thank you for sharing Uday! Chicken breast can be a bit drier, but I’m glad you enjoyed it. “Black mushroom” can refer to different types. Wood ear is sometimes called that, but there are other black mushrooms too. Without seeing it, it’s hard to judge, and wood ear itself varies in quality and texture.

Made this today. Very simple to make and came out yummy. I had breast so the meat was a little dry when cooked. Also i had black mushrooms – are they same/similar to woodear mushrooms? Seem a little harder(not as velvety).

You can double the seasonings and water to make more sauce while keeping the same amount of ginger and garlic. To prevent it from becoming too salty, I’d recommend skipping the salt initially and adjusting to taste at the end. Hope this helps!

Made this last night and served it with your bao buns (which i had frozen a few weeks ago). Delicious!! One Q, if i wanted more sauce, should i just double the liquids in the recipe (the sauces plus the stock) or would i also have to up the ginger and garlic accordingly?
