Yes, you can skip the Shaoxing rice wine. It’s used mainly for making the Sichuan peppercorn moist to prevent burning in hot oil. You can use water instead.

I’ve never tried using coconut oil, but I assume it works. The broth will have a distinct coconut flavor, which could be nice if you enjoy its taste. Let me know how it turns out if you ever give it a try.

Hot pot with pickled cabbage broth is delicious too. Unfortunately, I don’t have easy access to authentic Chinese pickled Napa cabbage, so I haven’t tested a recipe for it yet.
